If you're looking for something a little different from your next salad, give this Grilled Little Gem Salad a try! We think it's the perfect side salad.
Lightly brush the cut sides of 300 g Little gem lettuce with 0.5 tablespoon Olive oil and season 1 pinch Sea salt and black pepper. Put cut side down on to a hot griddle pan and cook for 2 minutes. Depending on the size of your pan, this might need to be done in batches.
Add 1 Red onion, 6 Cherry tomatoes, 3 Radishes and 1 Avocado.
Pour over 8 tablespoon Lemon vinaigrette and use your hands to mix everything, making sure everything is coated with the dressing. Finish with 30 g Feta (crumbled) and 1 tablespoon Pine nuts.
