Ready in under 5 minutes, this creamy Whipped Feta is perfect with some homemade flatbread or pita dipped into it. This is definitely one for feta fans.
Put 250 g Greek yogurt and 200 g Feta into a blender jug.
Add juice and zest of 0.5 Lemon, 2 tablespoon Olive oil and 1 pinch Sea salt and black pepper.
Blend until you have your desired consistency.
Transfer to a bowl and swirl the top with the back of a spoon. Top with 2 tablespoon Fresh mint and 2 tablespoon Pine nuts and more oil (optional).
Notes
When zesting the lemon, be careful to avoid the white pith, as that can be really bitter.
Use fresh herbs rather than dried.
Try to use the best quality feta you can. If you are using a lower quality one, it will be a little drier so you will need to add a little extra olive oil to the mixture before blending.
Whipped feta is best served immediately as it will thicken as it sits.
