Whisk 1 Egg in a bowl and dip 2 Crumpets in to soak the egg up.
Put into the air fryer and cook at 180°C/350℉ for 2 minutes.
Open the air fryer and sprinkle 40 g Mature cheddar over the crumpets.
Put back in the air fryer and cook for a further 2 minutes.
Notes
For a lower fat version of these you can use a reduced fat cheddar.
Don't use pre-grated cheese as it has a coating on it to stop it all sticking together in the bag and it prevents it from melting as well.
Make sure the crumpets are not overlapping in the air fryer. You need space between them to allow the air to circulate and for them to get nice and crispy.
If you are looking for more of a golden brown colour, then air fry the crumpets for a minute or two longer.
