Heat 1 tablespoon Olive oil and add 320 g Stir fry vegetables and 0.5 head Broccoli. Cook over a low heat for 8 minutes.
Add 240 g Air fryer salmon bites and 75 ml Teriyaki sauce. Stir carefully to coat everything in the sauce.
Return to the heat and cook for a further 2 minutes.
Serve over rice and top with Sesame seeds (optional).
Notes
If you don't want to cook the salmon in the air fryer, then you can fry it before cooking the vegetables. Make sure to cut it into small chunks, because it will cook quicker.
Make sure you stir the stir fry often. This cooks at a high temperature, so keep stirring so everything doesn't burn.
Add some thinly sliced spring onions on top before serving for some added crunch.
We wouldn't recommend freezing this, as the cooked salmon and vegetables change texture after thawing.
If you are cooking the salmon in the pan, and not air frying it, then you can marinate it first for extra flavour.
