These oven baked onion rings are a much more healthy option than the deep fried version. A lightly seasoned but crispy coating make these a great side dish.

Ingredients
1large onioncut into thick slices
2eggswhisked
50gpanko breadcrumbs
2tablespooncajun seasoning
4tablespoonplain flour
Instructions
Mix together the flour and cajun seasoning in a bowl.
Put the panko breadcrumbs in another bowl, and whisk the eggs in a third bowl.
Slice the onions thickly and separate them into rings
Dip the onion slices in the flour mixture, then the egg and then roll in the panko breadcrumbs until they are completely covered. Put them on a lined baking tray.
Bake at 200C/400f/Gas 6 for 20 minutes, flip them and cook for a further 5 minutes until crispy.

You can use any breadcrumbs you like, however we find that panko gets them nice and crispy.
Feel free to change the seasoning used. You could swap Cajun for Mexican, Italian or Curry Powder.
Cooking times will depend on your own and how crispy you like your onion rings. Keep an eye on them and take them out when they are cooked to your liking.
Add some extra flavour to these by mixing some grated Parmesan in to the breadcrumbs.
