Combine 70 g Plain flour, 170 g Whole wheat flour, 0.5 teaspoon Baking powder and 1 pinch Sea salt in a large bowl.
Pour in 2 tablespoon Vegetable oil and using your hands, mix until you get a crumbly mixture.
Add 150 ml Warm water a little at a time. continue mixing until a smooth dough is formed.
Divide into 5 equal pieces. On a floured surface, roll each piece of dough into a circle around 22cm/9 inch in diameter.
Heat a frying pan (no oil) until hot - this will take 4-5 minutes. Cook each tortilla for 2 minutes each side.
Notes
The cook time is for one tortilla wrap. Cooking a larger amount will increase the cooking time, unless you have multiple pans heating simultaneously.
You need to use a really heavy based pan for this recipe.
The pan needs to be very very hot for these to cook. Heat your pan for a good 4 minutes before you add a tortilla to it. This will help it to puff up and give it those bubbles.
If you have a gas stove and want to give it a proper charred look, then hold each side of the tortilla over a flame for 30 seconds.
