The Best Prawn Sandwich
Ready in under 10 minutes, this prawn sandwich is going to transform lunchtimes. Easy to adapt and full of flavour - the perfect make at home pub grub.

Instructions
Fry the prawns in a little oil for 2 minutes. Allow to cool.
200 g frozen king prawns
In a bowl mix the mayonnaise, sriracha and lime juice.
3 tablespoon mayonnaise,
1 tablespoon sriracha sauce,
0.25 lime
Add the prawns to the sauce and mix well.
Slice the baguettes lengthways, being careful not to cut all the way through. Butter the bread (optional).
2 small baguettes
Add the little gem lettuce, rocket (arugula), avocado slices and then the prawns. Drizzle any remaining sauce over the prawns.

Notes
You could add some extra flavour by seasoning the prawns before frying them. Cajun seasoning would work well.
Swap the baguette for sourdough or a bagel for something a little different.
You can make the sauce sweeter by adding a pinch or sugar, or add a generous amount of black pepper for something with a bit more spice.
The amount of lime juice used will depend on how juicy your lime is. If it isn't very juicy, then use half a lime instead.
