In a small bowl, combine the herbs, spices and oil.
Pour about ¾ of the spice mixture over the chicken. Use your hands to rub it all over the chicken, coating all parts.
Put the chicken, breast side down, into your air fryer.
Cook at 190°C/375°F for 20 minutes.
Flip the chicken over. Pour the remaining rub mixture over the chicken breast.
Cook for a further 20-30 minutes.
Notes
Make sure you use the right size chicken for your air fryer, as all the baskets are different sizes.
If you have a really large chicken, then it is probably best to cook it in the oven as it might be a little snug for the air fryer. You can still use this spice rub for an oven roast chicken.
For a more warming flavour, you could add half a teaspoon of cinnamon to the spice mix.
You can also stuff a cut lemon into the inside of chicken as it adds a lovely extra subtle flavour.
Always make sure to let the chicken rest before slicing and serving. This helps the juices soak back into the meat and keeps it really moist.
