Easy nut free energy balls made with dates, oats, seeds and cocoa. These no-bake energy bites need no peanut butter or nut butter and are perfect for lunchboxes, after-school snacks and busy days.
Soak the dates: Remove the stones from 10 Medjool dates and put them into a bowl. Cover with freshly boiled water and leave for 10 minutes.
This is worth doing even with fairly soft dates because it makes them much easier to process.
Drain: Drain the dates but keep the soaking water.
You probably won't need it, but it is the easiest way to rescue the mixture if your energy balls turn out too dry.
Add to the food processor: Put the drained dates into the food processor with 60 g of Oats, 1 tablespoon of Ground flaxseeds, 3 tablespoons of Sunflower seeds, 2 tablespoons of Pumpkin seeds, 2 tablespoons of Desiccated coconut, 2 tablespoons of Cocoa powder and 2 tablespoons of Maple syrup.
Blend: Process until everything breaks down and starts to come together as one firm, sticky mixture.
If it is still crumbly, add a little of the reserved date water - one teaspoon at a time. Don't pour lots in at once or the mixture can quickly become too wet.
Roll: Take small pieces of mixture and roll them between your hands to make bite-sized balls.You should get approximately 22 small energy balls.
If the mixture is very sticky, chill it for 10-15 minutes first or slightly dampen your hands.
Notes
Use Medjool dates if you can. Their soft texture makes a big difference.
Don't throw the date water away until you've finished processing the mixture.
Add extra liquid slowly. Going from crumbly to too wet can happen very quickly.
For children who don't like lots of texture, process the oats and seeds first.
Make the balls fairly small for lunchboxes and younger children. If the mixture sticks to your hands, chill before rolling.
Make a double batch if you've got freezer space. Future-you will be grateful during a busy school week.
Let the kids help roll them. The balls don't need to look perfect and it's a good easy no-bake recipe for little hands to get involved with.
