Satisfy your chocolate cravings with these Chocolate Covered Raw Brownies. Made with dates, nuts and coated in velvety dark chocolate for a decadent treat.
Soak 200 g Medjool dates in boiled water for 10 minutes.
Put 200 g Mixed nuts into a bag and crush them to varying sizes.
Drain the dates and put them into a food processor with the crushed nuts (save some nuts to sprinkle over). Blend the dates and nuts to form a crumbly consistency.
Add 6 tablespoon Cocoa powder, 4 tablespoon Tahini and 1 teaspoon Vanilla extract and blend again until the mixture comes together.
Roll the mixture into balls about the size of a table tennis ball. Put onto a lined baking sheet and refrigerate for 30 minutes.
Melt 100 g Dark chocolate and dip the balls into it, coating each ball fully.
Sprinkle over the reserved crushed nuts and refrigerate until the chocolate has set.
Notes
The best extra tip I can give you for these raw chocolate brownies is make more. Make more than you think you will need, as they will go very quickly! Did I mention how GOOD they are?
Make sure to use the best chocolate you can for this, as so much of the flavour comes from it. We prefer dark chocolate because it gives a really rich and intense flavour.
Any nuts will work in this recipe, so don't buy anything special as you can use whatever you have.
