Coat 280 g of Chicken breast chunks in 1 tsp of Paprika and 1 tbsp of Italian seasoning.
Heat 1 tbsp of Olive oil in a large pan and add the coated chicken. Cook for 2-3 minutes on each side. Once cooked, set aside.
In the same pan, add 140 g of Orzo, 2 Garlic cloves and 500 ml of Chicken stock. simmer for 6-7 minutes, stirring occasionally.
Add 100 g of Spinach, 10 Cherry tomatoes, 20 g of Parmesan and 2 tablespoons of Sun-dried tomato pesto. Mix well.
Add 50 ml of Crème fraîche and season with 1 pinch of Fine sea salt and 1 pinch of Ground black pepper. Mix well and cook until the spinach has wilted.
Add the cooked chicken and simmer until everything is cooked through.
Notes
This sauce will thicken as it cools, so you can add some extra stock to thin it out if you prefer.
For some extra texture, you can add some pine nuts on top before serving.
You don't have to use chicken for this. You can use another protein like salmon, prawns or even steak.
Only use freshly grated Parmesan. Don't use a pack of pre-grated cheese, as it doesn't melt very well.
