These creamy lemon overnight oats are an easy, high-protein make-ahead breakfast with fresh citrus flavour, juicy blueberries, and a dessert-like taste.
Oat mixture: Put all of the ingredients into a mixing bowl.
Combine: Mix well to combine everything.
Portion: Divide the mixture between serving jars and refrigerate for at least 4 hours, but preferably overnight.
Notes
Freshly squeezed lemon juice and finely grated lemon zest provide the strongest, freshest flavour. Bottled lemon juice will not give the oats quite the same brightness. When zesting the lemon, grate only the yellow outer layer. The white pith underneath can taste bitter.
Mix everything thoroughly. Chia seeds can stick together when they first come into contact with liquid. Stir the mixture particularly well before refrigerating it so the seeds are evenly distributed. For an especially smooth result, stir the oats again after they have been in the fridge for 10 to 15 minutes. This helps break up any chia seed clumps before the mixture fully thickens.
The oats and chia seeds will expand as they absorb the liquid. Choose a jar or container with enough room to stir the mixture comfortably and add toppings in the morning.
