These Lemon Overnight Oats are creamy, delicious and full of bright citrus flavour, with 16 grams of protein and 11 grams of fibre per serving. Made with Greek yogurt, chia seeds, fresh lemon and juicy blueberries mixed with oats, they are a simple make-ahead breakfast that feels a little more special than an ordinary bowl of oats. It's like having dessert for breakfast!

We are big fans of overnight oats. They sometimes save a chaotic school morning and really make me feel like I have my life together as a healthy breakfast is on the table within minutes with just a little prep the night before.
Prepare them the previous night, adjust the consistency with milk in the morning and add your chosen toppings just before serving. The best thing is, they are so easy to adapt so you can have a different flavour every time.
These lemon overnight oats are currently our favourite, as they have such a huge burst of lemon flavour.
Everything is mixed together in one jar or container, then left in the fridge overnight. By morning, the oats and chia seeds will have absorbed the liquid, creating a thick and creamy breakfast with no cooking required.
Enjoy them straight from the fridge, or finish them with an extra spoonful of Greek yogurt, lemon curd and a few white chocolate chips for a more indulgent breakfast.

Ingredients and Substitutions

- Oats - Use rolled oats. Jumbo oats won't soften and quick cook oats will go mushy.
- Yogurt - You can use any fat percentage Greek yogurt. You can use plain yogurt but the thicker it is, the better. You can use coconut yogurt too.
- Milk - Any milk will work.
- Chia seeds - You could swap these for flax seeds or hemp seeds if you prefer.
- Vanilla - Use extract rather than essence.
- Maple syrup - You can swap this for honey if you prefer.
- Lemon - Fresh lemon juice and zest.
- Blueberries - Fresh or frozen will work.
Fresh vs Frozen Blueberries
Fresh and frozen blueberries both work well.
Fresh blueberries hold their shape better, while frozen blueberries soften overnight and release juice into the oats, giving a stronger blueberry flavour and a purple tint.
For extra blueberry flavour, lightly mash some of the berries before mixing them in.
Variations
Raspberry and lemon overnight oats - Replace the blueberries with fresh or frozen raspberries. Raspberries have a sharper flavour and pair particularly well with lemon. Frozen raspberries will soften and release some juice overnight, creating pink streaks through the oats.
Lemon poppy seed - Add a small amount of poppy seed to the oat mixture for a flavour inspired by lemon poppy seed cake. The poppy seeds will add a subtle crunch without changing the consistency significantly.
Coconut lemon - Use coconut milk and add a little desiccated or shredded coconut to the overnight oats with lemon. Coconut has a natural sweetness that balances the sharpness of the lemon. You can also add toasted coconut just before serving for extra texture.
Vegan - Use a thick dairy-free yogurt and your preferred non-dairy milk. Maple syrup is already suitable as a plant-based sweetener. Oat, almond and coconut milk all work well, although each one will slightly change the flavour and consistency.
Higher Protein - You can mix in a small amount of vanilla protein powder. If you can find lemon protein powder, then even better! Protein powder absorbs liquid, so you may need to increase the amount of milk to prevent the oats from becoming too thick.
How To Make Lemon Overnight Oats

Oat mixture
Put all of the ingredients into a mixing bowl.

Mix well to combine everything.

Portion
Divide the mixture between serving jars and refrigerate for at least 4 hours, but preferably overnight.

Lemon Overnight Oats Optional Topping
The toppings are not part of the official recipe, but they make a delicious addition when serving and make it feel a little more indulgent:
- Greek yogurt
- Lemon curd
- White chocolate chips
Extra Greek yogurt adds extra protein and a small spoonful of lemon curd adds extra sweetness and a stronger lemon flavour, while white chocolate chips complement the tart citrus and berries.
Keep the toppings separate until you are ready to eat so they retain their texture.

Lemon Overnight Oat Storage
Store the lemon overnight oats in a sealed jar or airtight container in the refrigerator.
They are best enjoyed within three days. The oats will continue to soften and thicken during storage, so you may need to add a splash of milk before serving on the second or third day.
Keep optional toppings in separate containers and add them just before eating. This is especially important for white chocolate chips or crunchy toppings, which can soften when stored directly on the oats.
Freezing is possible, but it is not the best storage method for this recipe. Greek yogurt can separate after thawing, and the blueberries may become very soft.
Meal Prep Tips
- Make 2-3 portions at a time for the best texture.
- Store in individual jars for grab-and-go breakfasts.
- Leave space at the top of the jar for stirring and toppings.
- Add lemon curd, extra yogurt and white chocolate chips just before serving.
- Stir in a splash of milk on day two or three if the oats have thickened.
Dannii's Top Tips
- Freshly squeezed lemon juice and finely grated lemon zest provide the strongest, freshest flavour. Bottled lemon juice will not give the oats quite the same brightness. When zesting the lemon, grate only the yellow outer layer. The white pith underneath can taste bitter.
- Mix everything thoroughly. Chia seeds can stick together when they first come into contact with liquid. Stir the mixture particularly well before refrigerating it so the seeds are evenly distributed. For an especially smooth result, stir the oats again after they have been in the fridge for 10 to 15 minutes. This helps break up any chia seed clumps before the mixture fully thickens.
- The oats and chia seeds will expand as they absorb the liquid. Choose a jar or container with enough room to stir the mixture comfortably and add toppings in the morning.
- Use certified gluten-free oats to ensure this recipe is gluten free.
- Optional: add a tiny pinch of salt to balance the sweetness and bring out the lemon and vanilla flavours.

They can usually be eaten after approximately four hours, although the texture may be slightly firmer. An overnight soak will produce a thicker, creamier and more evenly combined result.
Overnight oats are normally eaten cold, but they can be warmed gently if you prefer. Transfer the oats to a microwave-safe bowl and heat them in short intervals, stirring between each one. You may need to add a splash of milk because the mixture will thicken as it warms.
Bear in mind that heating will soften the blueberries and may slightly reduce the fresh taste of the lemon. Add any lemon curd, yogurt or chocolate toppings after warming rather than before.
Absolutely. Although as the the blueberries defrost they will release juice into the oats, creating purple streaks.
You could add a tablespoon of vanilla protein powder to increase the protein. However, as protein powder absorbs liquid, you may need to add a splash of milk to loosen the oats.
These overnight oats can be made dairy free with a few swaps. Use a dairy-free milk, such as Oat Milk or Almond Milk and then use a dairy-free yogurt. For a thick, dairy free yogurt, we recommend Coconut Collab coconut yogurt (this will add a coconut flavour) or Alpro Greek Style Soya yogurt.
You can, but I prefer adding it just before serving. This keeps the base recipe fresher and lets you swirl the lemon curd on top for a stronger lemon flavour and better presentation.

Ingredients

- 100 g (½ cup) of 0% Fat Free Greek yogurt - plus extra for serving (optional)
