Depending on what ingredients you use, these will last about 3-4 days in airtight containers in the fridge. Things like watermelon will go mushy quicker and crackers might start to go soft. So something to think about when deciding which one to grab out of the fridge.
You could make a breakfast lunchable (breakfastable?)by having Greek yogurt and peanut butter, with some bananas and berries and then some Low Sugar Granola.
