Instructions
Heat
0.5 tablespoon Olive oil
in a pan over a medium heat. Remove the meat from
4 Chicken sausages
and fry in the oil until browned - about 6 minutes.
Whisk
4 Eggs
.
Heat
1 tablespoon Butter
in a large pan and add the whisked eggs. Scramble and cook to your liking.
While the sausage meat and eggs are cooking, heat a dry pan and toast the
6 Mini tortillas
for about 10 seconds per side.
Divide the scrambled eggs between the toasted tortillas.
Add the cooked sausage meat.
Top with the
8 Cherry tomatoes
,
0.5 Avocado
and
40 g Light Feta
.
Notes
Make sure to warm your tortilla first. Wrap them in foil and place in a warm oven (or microwave for 20–30 seconds.
Lightly charring tortillas on a skillet or open flame adds an amazing smoky flavor.
Don't overcook the eggs. Keep them soft and creamy since they’ll firm up slightly in the taco.
