These chicken sausage tacos are super easy to make, customisable, warming and filling. They are good for a busy morning before the school run, or a lazy Sunday morning breakfast when you want something comforting.
These have been a game-changer for us when we have early football matches at the weekend.

Ingredients and Substitutions

- Sausage - We used chicken sausage to keep it lean and lower in calories. But feel free to swap for your favourite sausages. Talking of chicken sausages, take a look at our Chicken Sausage and Bean Skillet.
- Eggs
- Tortillas - Soft white mini flour tortillas have been used here, but you could swap them for corn tortillas.
- Toppings - We kept it simple with some avocado, tomato and feta. But you could use a salsa and guac if you want it more taco like.
Variations
Eggs - If you want to make these breakfast tacos even higher in protein, then why not make our Cottage Cheese Scrambled Eggs? You could also add fried eggs, an omelette, or chopped boiled eggs. Whatever you prefer.
Meat - Turkey sausage, chorizo, or even crispy bacon work well instead of chicken sausage. You can even use a spiced crumbled tofu or black beans for a vegetarian protein option.
Veggies - Add sautéed bell peppers, spinach, cooked potatoes or mushrooms for extra fiber and nutrients.
Toppings - If you like things hot, then make our Restaurant Style Salsa or Pico De Gallo to go on top and then cool it down a little with some Homemade Guacamole. We are big fans or feta on tacos, but you could leave the cheese off to make them lighter or even use a mature light cheddar.
Some other delicious topping choices are a drizzle of your favourite hot sauce, some fresh coriander (cilantro) and jalapeños. Red onion and lime juice are good for a flavour punch too.
How To Make Breakfast Tacos - Step by Step

- Step 1: Heat the oil in a pan over a medium heat. Remove the sausage meat from their casings and fry in the oil until browned - about 6 minutes.

- Step 2: Whisk the eggs.

- Step 3: Heat the butter in a large pan and add the whisked eggs. Scramble and cook to your liking.

- Step 4: While the sausage meat and eggs are cooking, heat a dry pan and toast the tortillas for about 10 seconds per side.

- Step 5: Divide the scrambled eggs between the warm tortillas.

- Step 6: Add the cooked sausage meat.

- Step 7: Top with the tomatoes, avocado and feta.
Freezer Friendly!
These high protein breakfast tacos are super freezer-friendly! Here's how to meal prep them:
- Assemble tacos with scrambled eggs, sausage, and cheese only (leave out the avocado and tomato).
- Wrap each taco tightly in plastic wrap, foil or parchment paper, then place them in a freezer-safe bag.
- Freeze for up to 2 months.
- To reheat: Unwrap, cover with a damp paper towel, and microwave for 1-2 minutes, or warm in the oven at 180°C/160°C(fan)/350°F/Gas 4 for 15 minutes.
- Add fresh avocado and tomato after reheating.

- Lightly charring tortillas on a skillet or open flame adds an amazing smoky flavor.
- Don't overcook the eggs. Keep them soft and creamy since they'll firm up slightly in the taco.

Ingredients
- 0.5 tablespoon Olive oil
- 4 Chicken sausages
- 1 tablespoon Butter
- 4 Eggs
- 6 Mini tortillas
- 8 Cherry tomatoes - diced
- 0.5 Avocado - diced
- 40 g (0.25 cups) Light Feta - crumbled
Instructions
- Heat 0.5 tablespoon Olive oil in a pan over a medium heat. Remove the meat from 4 Chicken sausages and fry in the oil until browned - about 6 minutes.
- Whisk 4 Eggs.
- Heat 1 tablespoon Butter in a large pan and add the whisked eggs. Scramble and cook to your liking.
- While the sausage meat and eggs are cooking, heat a dry pan and toast the 6 Mini tortillas for about 10 seconds per side.
- Divide the scrambled eggs between the toasted tortillas.
- Add the cooked sausage meat.
- Top with the 8 Cherry tomatoes, 0.5 Avocado and 40 g Light Feta.
