grated and liquid squeezed out

Instructions
Grate
240 g
of
Courgette (zucchini)
and then squeeze out the excess liquid and discard (or add to green smoothies). Set the grated courgette aside.
In a large bowl, whisk
2 Eggs
and then add
65 g
of
Plain flour
and
1 tsp
of
Baking powder
and
1 pinch
of
Sea salt and ground black pepper
.
Add the grated courgette,
60 g
of
Frozen peas
,
40 g
of
Feta
and
2 tbsp
of
Fresh mint
and gently mix it in to form a batter.
Heat
0.5 tbsp
of
Olive oil
in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
Serve with
Tzatziki
.
Notes
Why not try adding some grated carrot along with the courgette for some added colour?
You could swap the feta for Stilton or Parmesan. Parmesan will help to make them nice and crispy.
Feel free to swap the mint for parsley, coriander, dill or chives.
These fritters go well with any kind of creamy dip.
Add some extra greens with some finely chopped spinach.
To make these courgette fritters a little crispier, you could mix in some panko breadcrumbs.
