These tasty little green bites are a hit with kids, and a great way to get some extra greens in them - it is one of our favourite courgette recipes. Easy Courgette Fritters are healthy and simple to make and take just 10 minutes from prep to cook. They are perfect for a light meal or snack.

These courgette fritters have always been a favourite when weaning our kids. They make perfect finger food, and older kids and adults love them too.

If you don't know what to do with courgettes or have a lot of them growing, then this is a great place to start. Grated courgette with peas, mint and feta in a batter mix - they are easy to adapt with different vegetables and cheese. They store well and go great with a creamy dip.

Why You Will Love Them

  • Quick - These healthy courgette fritters are ready in less than 10 minutes and that includes prep time.
  • Veggie boost - These fritters are a great way to get more greens in your kids diet. Although you can see strips of green, they don't taste like vegetables because of the batter and cheese.
  • Easy to adapt - Use this as a base recipe and then you can adapt it with different herbs and cheeses.
  • Freeze well - These are great for batch cooking because they freeze so well. They defrost quickly too.

Ingredients and Substitutions

  • Courgette - Choose ones that are no longer than 8 inches and are free of nicks. A really fresh courgette will have very tiny hairs on the skin.
  • Eggs - The fresher the better. Bring to room temperature before making the batter.
  • Flour - We used plain flour, but whole wheat will work too.
  • Baking powder - This increase the volume and lightens the texture of the batter.
  • Salt and pepper - Season to taste. If we are making this for young children, we leave it out, but as our kids are older now, we can season meals more.
  • Peas - You can use frozen peas for this, just make sure they have thawed a little first.
  • Feta - Courgette and feta is such a delicious combination and the feta adds some extra saltiness too, so be aware of that when you are adding salt.
  • Mint - Another perfect flavour combination with feta and courgette. We use fresh mint.
  • Oil - This is what the courgette fritters are cooked it. Use a good quality olive oil.

Variations

These tasty little bites are really easy to adapt. You could add grated carrot as well, for a mixture of colour. Some finely chopped red onion gives them a nice crunch too. Mint not your thing? Swap it for parsley, coriander, dill or chives. But mint does go really well with courgette.

We used feta, but you could add chunks of cheddar, parmesan or even stilton to this. Add even more flavour with some lemon zest.

Use this recipe as a base and then try some different flavourings each time. We love adding Thai curry paste or pesto for a real punch of flavour. Or, you could add a Mexican or Cajun seasoning blend.

How to Make Courgette Fritters - Step by step

  1. Step 1: In a large bowl, whisk the eggs and then add the flour and baking powder and season.

  1. Step 2: Add the courgette.
Peas, feta cheese and chopped mint added to the bowl.
  1. Step 3: Then add the peas, feta and mint and gently mix it to form a batter.

  1. Step 4: Heat some oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.

Serving Suggestions

There are so many options when it comes to how to serve these. First things first, you need a dip. Dip is important. If you want something chunky, then an avocado salsa or Guacamole works well.

If you want more or a sauce, why not try sweet chilli sauce, Homemade Tzatziki, Homemade BBQ Sauce or Healthy Tomato Ketchup. We also really like serving a runny poached egg on top, as that gives it a protein boost and has a built in sauce already with it.

We also think our cheesy garlic bread is delicious with it.

You can eat these as a snack or light meal by themselves with some dip, or you can serve them with some sides for a more filling meal. Here are our favourite sides to serve them with:

  • Hassleback Potatoes
  • Creamy Mashed Potatoes
  • Baked Polenta Fries
  • Air Fryer Chips
  • Greek Potatoes
  • Italian Parmesan Roasted Potatoes

Storage

Store: Although these fritters are best to be eaten right away, so they don't go soggy, they can be stored in the fridge and freezer. To store in the fridge, keep in an air tight container and they will be good for the next day.

Freeze: To store in the freezer, put them on a baking tray in a single layer and once they are fully frozen, you can put them in a freezer bag and they will store for 3 months.

Reheat: When you want to reheat, make sure they are fully defrosted and you can heat them on a gentle heat in a frying pan.

Extra Tips

  • Why not try adding some grated carrot along with the courgette for some added colour?
  • You could swap the feta for Stilton or Parmesan cheese. Parmesan will help to make them nice and crispy.
  • Feel free to swap the mint for parsley, coriander, dill or chives.
  • These fritters go well with any kind of creamy dip.
  • Add some extra greens with some finely chopped spinach.
  • To make these courgette fritters a little crispier, you could mix in some panko breadcrumbs.

Frequently Asked Questions

Why are my courgette fritters soggy?

You need to squeeze out as much excess liquid from the courgettes as possible. Use a box grater or food processor to grate the courgette and then squeeze, squeeze, squeeze the liquid out. It stops the fritters from getting soggy and helps them to get nice and crispy.

Can you bake courgette fritters?

You can put them in a preheated oven at 220°C/200°C(fan)/425°F/Gas 7 for 30 minutes. They won't get as crispy, and won't be as easy for little kids to hold, but they will still cook fine and still taste delicious.

What is the difference between a courgette and zuchinni?

Courgettes and zucchinis are essentially the same vegetable but are called different things in different countries. In the UK, they are known as a courgettes, but in the US, they are called zucchini.
Technically though, there is a difference between the two. The names are used to refer to that same plant, but which is growing at a different stage of plant's development. The courgette is younger and therefore slightly smaller than the older and larger zucchini.

What other flour can be used?

If you want to give these fritters a fibre boost, then you can swap the plain white flour for wholemeal flour. They will have a little more of a nutty flavour.

How to make vegan courgette fritters

To make these fritters vegan, you need to swap the egg for a flax egg. For one egg, you just need to mix 1 tablespoon of ground flax seeds with 3 tablespoon of hot water.

Are courgette fritters gluten free?

If you use a certified gluten free flour, and make sure that there is no cross contamination, then these can be gluten free.

Ingredients

  • 240 g (2 cups) Courgette (zucchini) - grated and liquid squeezed out
  • 2 Eggs
  • 65 g (0.5 cups) Plain flour
  • 1 teaspoon Baking powder
  • 1 pinch Sea salt and ground black pepper
  • 40 g (0.25 cups) Feta
  • 2 tablespoon Fresh mint - chopped
  • 60 g (0.33 cups) Frozen peas - thawed
  • 0.5 tablespoon Olive oil
  • Tzatziki - for serving

Instructions

  • Grate 240 g Courgette (zucchini) and then squeeze out the excess liquid and discard (or add to green smoothies). Set the grated courgette aside.
  • In a large bowl, whisk 2 Eggs and then add 65 g Plain flour and 1 teaspoon Baking powder and 1 pinch Sea salt and ground black pepper.
  • Add the grated courgette, 60 g Frozen peas, 40 g Feta and 2 tablespoon Fresh mint and gently mix it in to form a batter.
  • Heat 0.5 tablespoon Olive oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
  • Serve with Tzatziki.

    I’m so excited to make these!
    I’m also going to attempt a vegan version for mum
    For me and my son (both veggies) I’m going to take your suggestion with various cheeses, I’m excited to see what gorgonzola would be like?! Or grated halloumi. I love feta but not everyone is a fan (9 year old son included) however I’m going to try with feta as I think it will compliment the courgettes & peas!
