Made with yogurt instead of cream, this Healthy Eton Mess still has all that deliciously fresh flavour and plenty of creaminess, just lower in calories.
Hull and chop 200 g Strawberries. Put half of them into a bowl and crush with a fork.
Divide half the crushed strawberries between serving glasses. Divide half 200 g Greek yogurt between the glasses.
Roughly crush 2 Meringue nests and add half to the glasses.
Finish with layers of the crushed strawberries, the remaining yogurt, remaining meringue and chopped strawberries.
Notes
For some extra crunch and some added healthy fats, you can top off this healthy Eton mess with some chopped nuts.
You can use frozen berries instead of fresh, which means this can be made all year round and not just when berries are in season. Make sure you defrost them first.
If you wanted to make this a little more indulgent, you could add a couple of teaspoons of good quality jam dotted in the layers.
