Put 125 g Blueberries, 60 ml Maple syrup, 2 tablespoon Fresh mint and a splash of still water into a saucepan.
Heat over a medium heat for 5 minutes, gently pushing the blueberries down with a spoon so they burst.
Transfer the heated blueberries to a fine mesh sieve and strain over a bowl. Allow to cool for about 5 minutes.
Pour 250 ml Soda water and 80 ml Lemon juice into a tall carafe.
Add 30 g Blueberries fresh blueberries.
Pour in the blueberry syrup and top up with 750 ml Water.
Serve over ice.
Notes
Give the jug a good stir before serving as the berries will settle at the bottom and the syrup and water can start to separate - this ensures perfect flavor every time.
