Ingredients and Substitutions

- Cottage cheese - I used fat free, but you can use 2% or higher. Don't worry about the texture of cottage cheese, as it gets blended until it is smooth.
- Cacao powder - This is where the chocolate flavour comes from. You could use cocoa powder instead if you like.
- Maple syrup - This helps to add a little extra sweetness to the cottage cheese mousse. You could use honey or agave nectar if you prefer.
- Vanilla - This adds a lovely warm flavour. Make sure you are using extract and not essence, which will give it an artificial flavour.
- Chocolate - This is optional, but we like to melt some dark chocolate and add a little bit on top to add a "magic shell" type layer.
Variations
Chocolate chips - Everything is better with more chocolate, right? If you want some extra texture in the cottage cheese chocolate pudding, then why not add some chocolate chips? Milk, dark or white all work.
Protein - You could swap the cacao powder for some chocolate protein powder to give it a protein boost. Most protein powder is sweetened, so you might want to reduce the amount of maple syrup used.
Seeds - You can add some chia seeds to this, which not only increases the protein, but it gives it an amazing texture once the seeds expand.
Greek yogurt - If you want to make it extra cream and to bulk it out a bit, then you can do half cottage cheese and half Greek yogurt.
Peanut Butter - Chocolate and peanut butter are SUCH a good match. Blend some peanut butter in with this high protein chocolate mousse. Any nut butter will work.
Mint - If you love chocolate mint, then swap the vanilla extract for some mint extract.
Mocha - You can dissolve 1 teaspoon of instant coffee granules in a teaspoon of hot water and add to the mixture for a coffee-infused treat.
How To Make Cottage Cheese Chocolate Mousse - Step By Step
- Step 1: Put all of the ingredients into a blender. Blend until smooth, scrapping down the sides as needed and blending again. This will take about 45 seconds.
- Step 2: Pour into serving glasses.
- Step 3: For a chocolate topping (optional), melt the dark chocolate and drizzle a thin layer over the top of the mousse. Refrigerate until set - this will take about 2 hours.
