Store bought chocolate rice cakes are so expensive. Plain rice cakes are pretty budget friendly, but as soon as you add chocolate to them (especially dark chocolate), they bump the price up. We are trying to make as many snacks ourselves as possible and these homemade chocolate rice cakes have become a favorite with our kids.
Not only are these chocolate covered rice cakes so quick and easy to make, but there are so many ways to adapt them with different toppings too. Kids will love getting involved with making these, and adding their own toppings.
These make a great snack for school too, especially if your kids are asking for chocolate bars. You get that hit of chocolate flavor (but we use refined sugar free chocolate chips), but it's still a nutritious and filling snack that is a great source of fibre.

- Rice cakes - Use lightly salted wholegrain rice cakes.
- Chocolate - We used Refined Sugar Free Dark Chocolate Chips to keep this a sugar free healthy snack.
- Toppings - We used a ground nut/seed mix and some freeze dried berries as they add crunch, color and flavor.

The best thing about this recipe is how easy it is to adapt. You can make every single one of them different by adding a different topping.
Chocolate - You can use a different chocolate if you want to as well. Milk, white and dark chocolate all work for this rice cake dessert.
Toppings - Here is where you can go crazy and pretty much add whatever you like! Nuts, seeds, chocolate sprinkles, cacao nibs, dried fruit, goji berries - it all works.
You could add a drizzle of peanut butter (cashew butter or almond butter also work well) in to the chocolate and swirl it in before it sets too. You can use sunflower seed butter to make these a nut-free option for school snacks too.
How to Make Chocolate Covered Rice Cakes - Step by Step
- Step 1: Melt the chocolate in a small pan.
- Step 2: Spread the chocolate over the rice cakes.
As soon as the chocolate is on the rice cakes, sprinkle over the toppings before the chocolate sets so that the toppings stick to it.

- Sometimes when you are using very dark chocolate, it can be hard to melt and it will start to "seize". Add a little coconut oil to it, which will not only help it to melt, but it will make it nice and glossy too.
- You need to work quickly when making these rice cakes covered in chocolate, because the chocolate will set quickly as it's only thin. You need to get the toppings on before it sets, so they stick.
- To keep these rice cakes dipped in chocolate simple, you could just sprinkle some sea salt on the melted chocolate - the salt brings out the sweetness of the chocolate.

Ingredients
- 6 Rice cakes
- 55 g (0.25 cups) Dark chocolate chips
- 20 g (0.25 cups) Freeze dried berries
- 1 teaspoon Ground nuts/seeds mix

- Melt 55 g Dark chocolate chips.
- Spread the melted chocolate over 6 Rice cakes.
