Make these hot honey chicken bowls for an easy, healthy, high protein meal prep recipe. Made with spicy chicken, sweet potatoes, fresh toppings and big flavour.
Put 300 g Chicken breast (diced) into a large mixing bowl and add 1 tablespoon Olive oil, 2 teaspoon Hot honey, 2 tablespoon Lime juice, 0.5 teaspoon Garlic granules, 0.5 teaspoon Paprika, 1 pinch Sea salt and 1 pinch Ground black pepper. Mix well to coat the chicken.
Heat a pan over a medium-high heat and add the coated chicken.
Cook the chicken for 8-10 minutes until cooked through.
Meanwhile, mix together 4 Cherry tomatoes, 1 Avocado and 90 g Sweetcorn.
Build the bowl by dividing 40 g Rocket (arugula), the cooked sweet potato, cooked chicken, corn salsa, 60 g Pickled red onions, 30 g Pickled jalapeños, 50 g Carrot and 2 Baby cucumber. Then crumble over 40 g Light feta.
Notes
Pat the chicken dry first, as it will make it easier to coat.
Cut the chicken into even-sized pieces so it cooks evenly and stays juicy. Use a meat thermometer to check the chicken has a minimum internal temperature of 74°C/165°F.
Don’t overcrowd the pan/air fryer - cook in batches if needed to get that lovely crispy edges on the sweet potato and chicken.
If you are unsure of spice levels, add a little to the chicken and cook it and then you can always add some more when serving the hot honey chicken bowls.
