We love sweet potatoes and one of the easiest and tastiest ways to cook them is by making Air Fryer Sweet Potato Cubes. These bite-sized pieces are crispy on the outside, tender on the inside, and bursting with natural sweetness. Best of all, they cook in just 15 minutes in the air fryer, making them a perfect side dish or snack.

Ready in just 15-20 minutes, these sweet potato cubes in the air fryer are a great option for a last-minute side dish and quicker than making fries. Our kids LOVE them too.

Sweet potatoes are packed with vitamins, fiber, and antioxidants, making them a nutritious addition to any meal and the natural sweetness is just SO good.

The air fryer gives these sweet potato cubes a perfectly crispy exterior while keeping the inside soft and fluffy and much quicker than roasting in the oven. Really easy to customise with your favourite seasonings, these cubes can be sweet, savoury, or spicy.

Ingredients and Substitutions

All the ingredients needed to make this recipe, each with a text overlay label.

A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.

  • Sweet potatoes - We used medium sized orange sweet potatoes. The same method works well with regular potatoes or other root vegetables like carrots or parsnips.
  • Oil - Use a good quality extra virgin olive oil. Just enough oil to lightly coat the cubes is all you need. Too much oil can make them soggy. Avocado oil works really well too.
  • Seasoning - Generously season with salt and pepper to taste, and then we added some garlic powder and paprika. You could add onion powder too - we have some other options for spices below.

Variations

Sweet & Spicy: Add a pinch of cayenne pepper or chilli powder and a drizzle of honey or maple syrup for a sweet and spicy kick.

Herb-Infused: Toss the cubes with dried thyme, rosemary, or oregano before air frying.

Cinnamon Sugar: For a dessert-like treat, sprinkle the cubes with cinnamon and brown sugar after air frying and serve with a dollop of whipped cream or yogurt.

Asian-Inspired: Season with soy sauce, a touch of sesame oil, and a sprinkle of sesame seeds for an umami-rich twist.

As a side dish: Pair these sweet potato cubes with our Chicken Skewers, Slow Cooker Chicken Thighs, Baked Fish Parcels, or Air Fryer Steak for a well-rounded meal.

In a salad: Toss the cubes into a warm grain salad with quinoa, kale, and a tangy vinaigrette. Try our Little Gem Salad.

As a snack: We would happily eat these cubed sweet potatoes straight from the basket. Enjoy them as a healthy snack with a dipping sauce like our Southwest Sauce or Cottage Cheese Dip.

In tacos: Add these crispy sweet potato cubes to tacos with black beans, avocado, and salsa for a delicious vegetarian taco option.

Breakfast: Toss sweet potato cubes into a breakfast scramble with eggs, spinach, and feta.

Pizza Topping: Use these cubes as a unique topping for a homemade pizza, along with goat cheese, caramelized onions, and rocket (arugula).

Soup Garnish: Top a bowl of creamy butternut squash soup or slow cooker tomato soup with a handful of these cubes for added texture.

Extra Tips

  • Cut the sweet potatoes into evenly sized cubes to ensure they cook at the same rate.
  • After cutting the sweet potatoes, pat them dry with a paper towel before tossing them with oil. This helps them crisp up better in the air fryer.
  • Make sure you preheat your air fryer first, so the sweet potato chunks start cooking straight away, this will help reduce cooking time.
  • Cooking the cubes in a single layer will help them get crispy. If necessary, cook in batches.
  • Depending on the size of your air fryer, you may need to cook them in batches to avoid overcrowding.
  • Shaking the basket halfway through cooking ensures that all sides get evenly browned.
  • You will know that they are done when they’re crispy on the outside and fork-tender on the inside.

It's a personal preference. We prefer ours peeled, but you can save yourself some time by not peeling them.
