Did you know that you can make an incredible tomato soup in the slow cooker? Just dump all the ingredients into the slow cooker and cook low and slow and then blend. Rich and smooth, Slow Cooker Tomato Soup is the ultimate healthy comfort food.

About slow cooker tomato soup

You just can't beat soup for warming comfort food and tomato soup is always a favourite in our family. Although we love our Easy Tomato Soup, Air Fryer Tomato Soup and Tomato and Basil Soup recipes, this slow cooker tomato soup is the easiest soup to make.

No pre-cooking needed, you just dump everything into the slow cooker and leave it for 3 hours. The ultimate lazy homemade soup recipe.

A thick, creamy and velvety smooth soup that is bursting with tomato flavour. Put this on in the morning, head out for a walk and come home to soup all ready to be blended and served with crusty warm bread. The best part is, unlike store bought soup, there are no additives.

Ingredients and substitutions

All the ingredients needed to make this recipe each with a text overlay label.
  • Tomatoes - Yes, we "cheated" and used canned tomatoes. We love making this all throughout winter when fresh tomatoes aren't their best, so we used canned. Try to choose the best quality ones you can, as the cheaper ones tend to be a bit watery. You can use fresh tomatoes though.
  • Onion, carrot, celery & sweet potato - This is the base of any good soup. You could use white potato, but we love the creaminess that sweet potato gives, as well as all the nutritional benefits. You could also add some butternut squash.
  • Garlic - You can save some time and use frozen crushed garlic.
  • Tomato puree - If you are using fresh tomatoes in winter to make this slow cooker tomato soup then add a little more tomato puree to boost the tomato flavour.
  • Stock - A good quality vegetable stock pot.
  • Seasoning - Generously season with salt and pepper.
  • Creme fraiche - A little added before serving slow cooker tomato soup adds a lovely creaminess.

How to make slow cooker tomato soup - Step by step

One: Put all of the ingredients into your slow cooker.

Two: Give everything a good mix.

Three: Cook on high for 3 hours of low for 6 hours.

Four: Use an immersion blender to blend tou your desired consistency.

Variations

If you wanted to add more flavour, then why not try roasting the tomatoes first? If you wanted to use fresh tomatoes and they are out of season, then we would recommend roasting them first.

Put them into a preheated oven at 180°C/160°C(fan)/375°F/Gas 4 with some olive oil for 40 minutes.

We love the combination of red pepper and tomato in a soup, so why not add some roasted red peppers along with all the other ingredients?

If you wanted to make this really creamy, then once you have blended the slow cooker tomato soup, stir some cream into it. A little goes a long way, so it doesn't have to be super indulgent.

Serving suggestions

Soup and bread is such a classic combination. But why not take the humble slice of bread and butter up a gear and make your own crunchy croutons? Not just any croutons, but cheesy, herby croutons. They are so easy to make, and a great way to use up bread that is going a little stale.

Just take a couple of slices of bread and cut into 1 inch cubes and scatter on a baking tray. Drizzle with olive oil and sprinkle with Parmesan (or grated cheddar) and sprinkle with dried oregano.

Put them into a preheated oven at 180°C/160°(fan)/350°F/Gas 4 for around 8 minutes.

Why not try our Air Fryer Croutons or Sourdough Croutons. A couple of slices of buttered crusty bread go down well too.

Storage

Store: You can store any leftovers in an air tight container and it will keep for up to 3 days. Just make sure it has completely cooled before it goes in the fridge.

Freeze: Once it is fully cooled, you can transfer it to freezer bags and then it can lay flat in the freezer for easier storage.

Defrost: You can defrost at room temperature and it will take a few hours.

Reheat: Reheat it on the hob until it is fully heated all the way through.

Extra tips

  • Make sure all the vegetables are cut to the same size, so that they cook at the same rate.
  • You could add a pinch of sugar to balance out the bitterness of the tomatoes.
  • We blend our tomato soup in the slow cooker until it is smooth. However, you could just pulse it a little bit with the stick blender and leave some chunks in it.
  • If you want to add a kick of heat to this, then add some red chilli flaked either whilst cooking or sprinkled on top before serving.
  • To really enhance all the flavours, stir in some butter or olive oil once it is blended.
  • You can also add some extra flavour with some sun-dried tomato paste.
  • Why not add some dried herbs for extra flavour too?
  • We use an immersion (stick) blender, as it is easier to use and clean. You can transfer it to a jug blender, but we don't recommend putting hot liquid in a jug blender.

Frequently Asked Questions

Can I make slow cooker tomato soup vegan?

Yes, the soup itself if vegan, just leave out the creme fraiche when serving, or use a vegan alternative.

Is this gluten free?

To make sure this slow cooker soup is gluten free, then use a gluten free stock cube and make sure there is no cross contamination.

What slow cooker do you recommend?

We use a Crock Pot DuraCeramic Slow Cooker and we love it. What I love most about it is that you can put the bowl insert on the hob (stovetop) too. I also love that it has a clear lid, as I am so impatient that I want to keep looking and seeing what it is doing. If you don't have a clear lid, then lifting it to see will release lots of the heat and add to the cooking time.

What can I do with leftovers?

If you want to serve leftovers a different way, then you can use leftover slow cooker tomato soup as a pasta sauce.

  • 800 g (1.75 lb) Chopped tomatoes - canned
