These Gingerbread Pancakes are the perfect way to start your Christmas morning with their warm spices and they take just 10 minutes to make with pantry staples. Stack them up, drizzle with maple syrup and top with cream and a gingerbread person.
Breakfast often gets forgotten about during the festive season, but we try to bring a festive twist to all our meals in the month of December. Ours kids LOVE this gingerbread pancake recipe. Just enough ginger to taste like a gingerbread person, but not too much to be overpowering.
These are basically Christmas pancakes, as they have all the best Christmas flavors. This recipe for gingerbread pancakes would be a great addition for a festive brunch table. They also freeze really well, so they are a great way to get ahead and stash some in the freezer for an easy Christmas morning breakfast made ahead of time.

Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Flour - We used all purpose flour (plain flour). You could use whole wheat flour, or half and half, but we find it makes them too dense.
- Baking powder - This helps the pancakes to rise and get perfectly fluffy.
- Sugar - We used dark brown sugar, as that's where all the rich flavor comes from that you get in a gingerbread person. It gives that molasses flavor, without using molasses too.
- Egg - Use a medium sized egg.
- Milk - We used skim milk, but whole milk would work.
- Spices - Ground ginger and ground cinnamon are what gives these Christmas pancakes all the festive flavors. Feel free to adjust and add more if you want.
- Vanilla - This really adds some extra warmth.
Gingerbread Pancakes Variations
If your kids are anything like mine, then it's unheard of to not add chocolate chips to pancakes! You can add some milk, dark or white chocolate chips to the gingerbread pancake mix.
You can also mix in some dried cranberries or cherries and some chopped nuts too which would still keep it Christmasy. Some ground nutmeg or ground cloves will also add to the festive flavors.

How To Make Fluffy Gingerbread Pancakes - Step by Step
- Step 1: In a large bowl, add the flour, sugar, baking powder, cinnamon and ginger. Stir well.
- Step 2: Add the milk, vanilla and egg to the dry ingredients.
- Step 3: Whisk well to form a smooth batter.
- Step 4: Heat a small amount of butter in a pan pour in ladles of batter. Cook until small bubbles appear, about 2 minutes.
- Step 5: Flip the pancakes over and cook for a further 1-2 minutes.
Recommended Equipment
Whilst these are not essential, for perfect pancakes, we recommend the using following items:
- Pancake batter dispenser. These allow you to get even amounts of batter each time.
- Pancake pan. These are large flat pans that allow even cooking of the pancakes.

Serving Suggestions
You can't go wrong with squirty cream (whipped cream), maple syrup, sprinkles and a gingerbread person on top, which is exactly how we have served our gingerbread pancakes. However, whatever you could normally throw on top of your pancakes will work here too.

To make this really special, and a little more indulgent, then some candied pecans are delicious on top. The added texture is amazing.

- Every stove cooks differently, so if you find your pancakes are browning too quickly, then turn the heat down.
- You could add a tablespoon of molasses if you wanted that more traditional gingerbread flavor.

Leftovers can be wrapped up and stored in an airtight container in the refriderator for up to 3 days. You can also freeze them (wrapped in portions) for up to 3 months. They only take a couple of hours to defrost at room temperature. We then just heat them up in the toaster, air fryer or under the broiler (grill).
This gingerbread pancake recipe makes quite a big batch, so you will want to keep them all warm whilst making the rest. You can keep a baking tray in the oven at a low heat (140°C/120°C(fan)/285°F/Gas 1) and keep adding them as they are cooked and then taking them all out when you are finished and serving.
Yes, you can swap for gluten free flour like or like, just make sure it is one with xantham gum added. You need to make sure you let the pancake batter rest for 20-30 minutes so it gives the flour time to rehydrate. The pancake texture will be gritty otherwise.

Gingerbread Pancakes
Ingredients
- 220 g (1.75 cups) Plain flour
- 1 teaspoon Baking powder
- 3 tablespoon Dark brown sugar
- 2 teaspoon Ground ginger
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla extract
- 1 Egg
- 300 ml (1.25 cups) Milk
Instructions
- In a large mixing bowl, add 220 g Plain flour, 3 tablespoon Dark brown sugar, 1 teaspoon Baking powder, 1 teaspoon Cinnamon and 2 teaspoon Ground ginger. Mix well.
- Add 300 ml Milk, 1 teaspoon Vanilla extract and 1 Egg to the dry ingredients.
- Whisk well to form a smooth batter.
- Heat a small amount of butter in a pan and add ladles of batter. Cook until small bubbles appear, about 2 minutes.
- Flip the pancakes over and cook for a further 1-2 minutes.
