We love a sweet breakfast, and it's even better when we can make it ahead of time. This Overnight Weetabix recipe is so easy to make, it takes less than 10 minutes and there are so many different ways to adapt it. It's kind of like overnight oats with Weetabix and it makes a nice change when you are bored of overnight oats. A great high fibre and protein breakfast to start your day.

Life is really busy at the moment, so we are fully in our meal prep era. Breakfast is probably our most stressful time of day, so anything that can make that a little smoother we are all for.

These overnight Weetabix are a family favourite, especially with our kids who love a sweet breakfast and they genuinely think this tastes like dessert!

Weetabix was a staple when we were growing up, but it was usually just served with milk and banana. Overnight Weetabix is having a bit of a moment, so we thought we would share one of our Weetabix breakfast ideas.

A simple yogurt and protein powder topping and then our homemade berry compote swirled in for extra sweetness. This is such a good way to start the day.

Ingredients and Substitutions

All the ingredients needed to make this recipe, each with a text overlay label.

  • Weetabix - Supermarkets usually carry their own version of this, which makes it more budget friendly. You could add a mixture of Weetabix biscuits and oats to make Weetabix overnight oats.
  • Milk - Any milk works here. We used skimmed milk, but whole milk, almond milk or oat milk will work too.
  • Maple syrup - This is optional, but we find the base does need a little bit of sweetness. Another liquid sweetener like honey or agave syrup would work too.
  • Yogurt - Use Greek yogurt as it's nice and thick and is the best for spreading on top of the overnight Weetabix.
  • Protein powder - This is totally optional, but we are always looking for ways to give our meals a protein boost. We leave this out when making this for our kids though. We used vanilla protein powder, which adds extra flavour.
  • Berries - We used frozen berries to make our homemade compote, as they are such a freezer essential for us. Budget friendly and perfect for using through the colder months when fresh berries are expensive and not very tasty. You could just add some spoons of jam though to make this even quicker.
  • Chia seeds - This helps to thicken the berry jam/compote and also add some extra protein and fibre.

Variations

The BEST thing about overnight Weetabix is that there are SO many different ways to make it. This is our super simple version with a berry topping, but we are going to give you lots of ideas to keep you going.

Chocolate - Who doesn't want to add chocolate to their breakfast? You could use chocolate protein powder, you could mix some chocolate chips into the base or you could drizzle some melted dark chocolate on top before it goes in the fridge.

Cheesecake - If you want to give this more of a cheesecake flavour, then you can stir some light cream cheese in to the yogurt.

Biscoff - Another popular topping that I see all over social media is Biscoff spread and then the biscuits crumbled on top as well. Definitely a more indulgent choice, but totally delicious.

Nut Butter - For some added protein, then why not add a swirl of nut butter into the yogurt. Try our Homemade Peanut Butter or Vanilla Almond Butter.

Banana - A good way to bulk this out and add another layer, is to add a layer of banana slices before the yogurt topping.

How To Make Overnight Weetabix - Step by Step

  1. Step 1: Put the frozen berries, chia seeds and a splash of cold water into a pan (a).
    Gently cook over a low heat stirring regularly. Once softened, mash the fruit to form a jam-like consistency (b).

  1. Step 2: Spread the jam over a plate and allow to cool.

  1. Step 3: Meanwhile, crush the Weetabix into a bowl. Add the maple syrup and milk. Mix well and spread out evenly.

  1. Step 4: Combine the yogurt and protein powder in a bowl.

  1. Step 5: Spread the yogurt mixture over the top of the soaked Weetabix base.

  1. Step 6: Add the cooled jam on top of the yogurt layer and swirl it around.
    Refrigerate for at least 4 hours, but overnight is best.

Extra Tips

  • If you are adding any crunchy topping like our Air Fryer Granola, then do that right before serving, otherwise they will go soft if put in the fridge overnight.
  • Feel free to use a flavoured yogurt to add extra flavour.
  • Make sure to mix the Weetabix and milk together thoroughly.
  • Don't be tempted to add too much milk, as the ratio needs to be as in this recipe, otherwise it will be too sloppy and runny.

Frequently Asked Questions

How to store overnight Weetabix

You can eat this after a couple of hours in the fridge, but it is best left overnight. We do like to make 2-3 of these at a time for a few days meal prep. But, be aware that the longer you leave it in the fridge the mushier it will become. It just depends on how you like the texture. It's fine in the fridge for 3 days though.

How to make this vegan

To make a vegan version of this, use a plant based milk to begin with. Then use a vegan yogurt like coconut and make sure any other toppings you use are vegan too.

Ingredients

  • 100 g (0.66 cups) Frozen berries
  • 1 teaspoon Chia seeds
  • 2 Weetabix biscuits
  • 0.5 teaspoon Maple syrup
  • 90 ml (0.33 cups) Skimmed milk
  • 70 g (0.33 cups) 0% Fat Free Greek yogurt
  • 1 tablespoon Protein powder

Instructions

  • Put 100 g Frozen berries, 1 teaspoon Chia seeds and a splash of cold water into a pan. Gently cook over a low heat stirring regularly. Once softened, mash the fruit to form a jam-like consistency.
  • Spread the jam over a plate and allow to cool.
  • Meanwhile, crush 2 Weetabix biscuits into a bowl. Add 0.5 teaspoon Maple syrup and 90 ml Skimmed milk. Mix well and spread out evenly.
  • Combine 70 g 0% Fat Free Greek yogurt and 1 tablespoon Protein powder in a bowl.
  • Spread the yogurt mixture over the top of the soaked Weetabix.
  • Add the cooled jam on top of the yogurt and swirl it around.
  • Refrigerate for at least 4 hours, but overnight is best.
