Spicy and crunchy vegetables are the star of this this Grilled Cheese Fajita Sandwich. A great way to use leftovers and the perfect vegetable packed comfort food. Easy to adapt and ready in under 15 minutes. A family favourite dinner turned in to an easy lunch.
There is not much that is more comforting than a grilled cheese sandwich and the great thing about them is that the filling options are almost endless. One of our favourite fillings is vegetable fajita! All the delicious spices of fajitas, in a grilled cheese sandwich. Such an easy and tasty lunch.

Step by step
One: Heat a little oil in a pan and add the peppers, onion, courgette and mushrooms and gently cook for 5 minutes until softened.
Two: Add the all the spices and salt and pepper, mix well and cook for a further 2 minutes.
Three: Toast the bread and then spread two slices with salsa. Divide the vegetables between the two salsa slices and then top with the cheese.
Four: Put until the grill for 3 minutes until the cheese has melted, put the other slice of toast on top and serve.
What vegetables to use
The great thing about this recipes is that it's really easy to adapt and use whatever vegetables you have. We used bell peppers, mushrooms and courgette. You could add some grated carrot or some finely chopped spinach to give it a green veggie boost.
What protein to add
This is a vegetable based dish, but that doesn't mean that you can't add some protein to it. Some grilled steak or leftovers from our Slow Cooker Whole Chicken.
What cheese to use
You want to use a cheese that melts really well. We used a light mature cheddar because it has a strong flavour so you can use less. You could also use a Swiss cheese or even pepper jack.
What to serve it with
As this is a fajita sandwich, you can serve it with all the usual fajita extras. We served it with Baked Tortilla Chips, Restaurant Style Salsa and our Best Guacamole recipe.
Extra tips
• Feel free to adapt the vegetables used. Just make sure that they are quick cooking soft vegetables, so that everything cooks evenly.
• You could swap the cheddar for Swiss cheese or pepper jack. Just use anything that would melt well.
• When it comes to bread, you can use your favourite slices. Sourdough or tiger loaf work well.
• If you want to add some protein, add some leftover shredded chicken.

Fajita Sandwich
Ingredients
- 0.5 tablespoon Olive oil
- 2 Bell peppers - thinly sliced
- 0.5 Onion - thinly sliced
- 0.5 Courgette (zucchini) - thinly sliced
- 4 Mushrooms - thinly sliced
- 0.5 teaspoon Paprika
- 0.5 teaspoon Cumin
- 0.5 teaspoon Garlic powder
- 0.5 teaspoon Mild chilli powder
- 0.5 teaspoon Ground coriander
- 1 pinch Sea salt and ground black pepper
- 4 slice Whole wheat bread
- 40 g (0.33 cups) Mature light cheddar
- 4 tablespoon Salsa
To serve (all optional)
- Guacamole
- Salsa
- Sour cream
- Tortilla chips
Instructions
- Heat 0.5 tablespoon Olive oil in a pan and add 2 Bell peppers, 0.5 Onion, 0.5 Courgette (zucchini) and 4 Mushrooms and gently cook for 5 minutes until softened.
- Add 0.5 teaspoon Paprika, 0.5 teaspoon Cumin, 0.5 teaspoon Garlic powder, 0.5 teaspoon Mild chilli powder, 0.5 teaspoon Ground coriander and 1 pinch Sea salt and ground black pepper, mix well and cook for a further 2 minutes.
- Toast 4 slice Whole wheat bread and then spread two slices with 4 tablespoon Salsa. Divide the vegetables between the two salsa slices and then top with the 40 g Mature light cheddar.
- Put until the grill for 3 minutes until the cheese has melted, put the other slice of toast on top.
- Serve with Guacamole, Salsa, Sour cream and Tortilla chips (all optional).
