This super easy Baked Feta with Tomatoes has all the Greek flavours you know and love in a simple one pan dish. A block of feta, tomatoes, olives, garlic and herbs all come together in a meal that is perfect for sharing. Just put it out on the table with some crusty bread and let everyone dig in.
On the table in less than 30 minutes, this simple Baked Feta with Tomatoes is great if you are entertaining and don't want to be stuck in the kitchen all evening. You can also easily add some extra vegetables to it, to make it feel a little less indulgent. It is basically just a block of feta, but what's not to love about that?!

Why you will love it

Ingredients needed
- Feta - Try to use authentic and good quality feta, rather that supermarket own "greek salad cheese" as you will be able to taste the difference.
- Tomatoes - We used cherry tomatoes on the vine. If you use ripe and in season tomatoes, they will have the best flavour. However, as we are roasting them, which brings out the flavour, this isn't so much of an issue.
- Oil - We used a good olive oil.
- Olives - This might be a controversial one, as I know not everyone likes olives, but we think they are a must in any Greek dish. Any olives will work here, and you can add more flavour by using stuffed olives like garlic or chilli stuffed. You could even use our Marinated Olive recipe.
- Oregano - A classic Greek herb. We sprinkled some dried oregano on top of the feta.
- Basil - A little fresh basil on top before serving really lightens the dish up and adds some freshness.

How to make baked feta - Step by step
One: Put the feta, tomatoes and olives in a baking dish and drizzle with olive oil and oregano.
Two: Put in a preheated oven at 200°C/400°F/Gas 6 for 25 minutes. Scatter with fresh basil before serving.
What is baked feta?
It's basically what it says - feta that has been baked. Ever wondered what happens when you bake feta? It totally changes its texture. It doesn't go super melty like a cheddar would, but it's not really crumbly like it is fresh from the fridge. It is somewhere in between and it is utterly glorious.
This was on pretty much every menu we came across when we were island hopping around Greece, and it was a struggle not to order it every time. Each time it came a different way.
Sometimes with just herbs, sometimes with roasted potatoes and sometimes with tomatoes and olives - our favourite way and the inspiration for this recipe. There was always some pita or crusty bread to dip in to it and it's one of my favourite travel food memories.
One thing I love about Greek food is the simplicity of it. They don't over complicate it, with too many competing flavour, so we have tried to stick to that here. Just plenty of olive oil, garlic, tomatoes, olives and herbs to bring it all together.
Variations
We love a dish that we can adapt, and this is one of those. You should still keep it fairly simple, but a a few extra veggies would definitely not hurt. We like some roasted red peppers, or even some chunks of roasted aubergine with this. It will add to the cooking time, but it is totally worth it.
Healthy addition
If you want to add some greens to this baked feta, then you can add some spinach leaves or chopped kale. If you want to add some extra protein, but still keep it vegetarian, then half a can of chickpeas is a great addition.
What to serve it with
This recipe was created WAY before the baked feta tik tok trend. However, if that is the recipe you are looking for then you can just mash everything up in the baking dish and stir it through cooked pasta. It's SO good.

Storage
Store: I mean, leftovers is not something we have ever experienced with this dish. In fact, quite the opposite - we always wish we had of made more. But, if you have far more restraint than we do, and you have some leftover, then it will keep fresh in the fridge for a day or two.
Freeze: We wouldn't recommend freezing baked feta, as it wouldn't have the same consistency when defrosted and reheated.

No, this is not vegan. We wouldn't recommend using a vegan feta alternative either as it won't melt the same.
Yes, you could get everything ready in the baking dish and then put it back in the fridge for a few hours before you are ready to cook it.
Feta is high in fat, so you might want to be mindful or portion sizes. However, it has such a strong flavour that a little goes a long way.

Baked Feta with Tomatoes
Ingredients
- 250 g (9 oz) Feta
- 400 g (3 cups) Cherry tomatoes - on vine
- 2 tablespoon Olive oil
- 20 (0.5 cups) Mixed olives
- 1 tablespoon Dried oregano
- 12 g (0.5 cups) Fresh basil
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Put 250 g Feta, 400 g Cherry tomatoes and 20 Mixed olives into a baking dish and drizzle with 2 tablespoon Olive oil and 1 tablespoon Dried oregano.
- Put into the oven for 25 minutes. Scatter with 12 g Fresh basil before serving.
