This Ninja CREAMi Sticky Toffee Pudding Ice Cream tastes like the classic British dessert, but it is made with Greek yogurt, milk and Medjool dates instead of refined sugar. The dates give it that deep caramel-like sticky toffee flavour, but SO much lighter.

Medjool dates are naturally soft, sweet and caramel-like, which makes them perfect for creating a sticky toffee pudding flavour without adding syrup, honey or sugar.
This healthy ice cream recipe has all the flavour of my favourite dessert, but high in protein and low in fat. It's so easy to adapt with different mix-ins too, so you can make it a different way every time.

Ingredients and Substitutions

A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Dates - Medjool dates will give the best caramel flavour.
- Baking soda - Whilst you could make this Ninja Creami sticky toffee pudding ice cream without it, it does help to soften the dates to make them blend easier.
- Yogurt - We used fat free Greek yogurt but a higher fat percentage would work too.
- Milk - Any milk will work here.
- Vanilla - Make sure you use vanilla extract and not essence.
- Cinnamon - To give it that classic flavour.
- Salt - A little really brings out the sweetness.
Variations and Add-ins
Chocolate - Add 1 tablespoon cocoa powder to the base before freezing. Dates and cocoa work really well together and it gives the ice cream a chocolate sticky toffee flavour.
Extra protein - Use a high-protein Greek yogurt or add half a scoop of vanilla protein powder. You may need a splash more milk before freezing if the mixture becomes very thick.
Banana - Blend in half a ripe banana with the dates, yogurt and milk. This makes it sweeter and slightly softer once spun.
Dessert style - Add chopped dates, crumbled sponge cake, crushed biscuits, chopped pecans, walnuts or dark chocolate chips after the base has been spun smooth. Use the Mix-In setting after adding them.
Salted Caramel - Increase the salt very slightly and add a spoonful of almond butter or cashew butter before freezing. This gives a richer, almost caramel sauce flavour.
How To Make Sticky Toffee Pudding Ice Cream

- Step 1: Put the dates into a bowl and add the baking soda.

- Step 2: Pour the boiled water over the dates and mix to dissolve the baking soda. Allow the dates to soak for 10 minutes.

- Step 3: Drain the dates and add to the Ninja pint tub with the rest of the ingredients.

- Step 4: Put the lid on the tub and freeze for 24 hours.

- Step 5: Remove the lid and put the frozen tub into the outer bowl and put on the outer bowl lid. Put into the Ninja Creami machine and set to the Frozen Yogurt setting and spin. This may result in a crumbly consistency.

- Step 6: Replace the tub in the machine and press Respin. This may take 1-2 more re-spins to achieve the perfect creamy consistency.
Serving Suggestions
Serve it as it is for a naturally sweetened frozen yogurt-style dessert. For a proper sticky toffee pudding feel, serve it with warm chopped dates, a drizzle of date syrup or a little warm toffee sauce.
It is also delicious with sliced banana, toasted pecans, crumbled digestive biscuits, crushed Biscoff biscuits, warm stewed apples or a little grated dark chocolate.
For a higher-protein dessert bowl, serve it with extra Greek yogurt, chopped nuts and a sprinkle of cinnamon.
For kids, serve it in cones or small bowls with banana slices and a few chocolate chips.

Dannii's Top Tips
- Use soft, sticky Medjool dates for this Ninja Creami sticky toffee pudding ice cream. If your dates are quite firm, soak them for 15 minutes instead of 10.
- Drain the dates well after soaking and pat dry. Too much extra water can make the finished ice cream icier.
- Blend the mixture until completely smooth before freezing. The Ninja Creami will make the frozen base creamy, but it will not fully blend large pieces of date into the mixture.
- Freeze the tub flat and level. An uneven frozen surface can affect how well the Creami blade processes the mixture.
- Do not worry if the first spin looks crumbly. This is very common with yogurt-based Ninja Creami recipes. One or two re-spins usually bring it together.
- For an even creamier result, add 1 to 2 tablespoons of cream cheese, double cream or coconut cream before freezing. This will make it richer, but the basic recipe still works well without it.
- If the mixture is still crumbly after two re-spins, add 1 tablespoon of milk and re-spin again. Add only a little at a time, as too much liquid can make it loose.
- For best results, eat it straight after spinning. If you refreeze leftovers, smooth the top flat before freezing again, then re-spin before serving.
