This Baked Egg Tortilla is a great protein packed breakfast option, and so easy to adapt with different vegetables, meat and cheese. It is basically a tortilla quiche, as instead of pastry it uses a wholewheat flour tortilla as the "crust". This is great for a light lunch too, and it also packs up well to take on picnics.
For a lower carb version of a quiche (a British classic), we make this tortilla quiche, as the whole recipe is made with just 1 wholewheat tortilla, rather than a whole sheet of pastry.
This is a much lower in calories and fat option and it's our go-to breakfast at the moment and one of my favourite ways to use a tortilla.
Not only is this baked egg tortilla a delicious way to eat eggs for breakfast, it's a great way to use up a single leftover tortilla wrap rather than it going to waste.
It's ready in just 25 minutes too and we often have this for dinner when we need something quick and filling. The kids love it too and they call it egg pizza.

Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Flour Tortilla - We used a wholewheat flour tortilla, which is why it is darker. You can use a white flour tortilla if you prefer.
- Eggs - We used medium sized eggs. If you use large eggs, then it will change the cooking time. Leave the eggs out of the fridge for 10 minutes before using. We use whole eggs, but you could use egg whites if you prefer.
- Spinach - This is an easy way to give a green veggie boost to this egg tortilla recipe. You could swap it for kale, but that would be chewier. Rocket (arugula) works well too.
- Tomatoes - These stop it from drying out and also add lots of colour. You could use sun-dried tomatoes instead.
- Olives - Any olives will work here and they add lots of saltiness, which is why we haven't seasoning this.
- Spring onions (scallions) - These add colour and crunch. You could use diced red onion instead.
- Bell pepper - Another way to add colour and crunch. For extra flavour, why not try our Roasted Red Peppers?
- Cheese - We used a mixture of mature cheddar and feta.
- Chives - These are optional, but they add a lovely extra flavour when sprinkled on before serving.
Variations
Vegetables - The great thing about this baked egg tortilla is that it is SO adaptable when it comes to vegetables. The only "rule" is, you need to make sure they are quick cooking vegetables.
As well as what we have already added, you could use courgette (zuchinni), broccoli, mushrooms, aubergine (eggplant), grated carrot, sun-dried tomatoes and onion.
Meat - We kept this baked egg tortilla vegetarian, as we could all do with some more meat-free meals in our lives. However, if you wanted to add some meat, then you could add some diced cooked sausage, or some chopped ham.
I wouldn't do this for breakfast, but for a lunch you could crumble in some leftover cooked meatballs.
Cheese - Whilst you don't have to add cheese to eggs and tortillas, we think it's a delicious addition.
You could add some cottage cheese, which would give this egg tortilla a protein boost. However, it would add liquid to it, so you may need to add a couple of minutes extra cooking time.
You could also add something like Stilton, which has a strong flavour or Parmesan, which adds a lovely nuttiness.
Mini version - We make a big version of this egg tortilla and then slice it up. However, you could make mini individual servings by using tacos rather than large flour tortillas. You can follow the recipe the same, but use a muffin tin and put a small taco in each one.
How to Make a Tortilla Quiche - Step by Step
Prep: Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6. Lightly oil a round ovenproof dish.
One: Carefully press the tortilla into the baking dish.
Two: Add the spinach to the bottom.
Three: Whisk the eggs and add the tomatoes, olives, onions, pepper, cheddar and about ยพ of the feta. Mix well.
Four: Pour the egg and veg mixture over the spinach. Top with the remaining feta.
Five: Bake for 20-25 minutes. Serve topped with chopped chives.
Serving Suggestions
We eat this is a light breakfast and the tortilla wrap is baked into it, so there is no need to add bread. You could add a slice of bread on the side if you wanted to.
For breakfast we usually serve eggs in tortilla with some greens and tomatoes.

Feel free to drizzle with some chilli sauce before serving too. Sriracha is always our go-to.
Storage
Store: This is best eaten straight after cooking, however it does store well. Any leftovers of this breakfast tortilla can be kept in an air tight container in the fridge for 3 days.
Freeze: We wouldn't recommend freezing this, as it is quite fragile.
Reheat: You can reheat it in the air fryer for a couple of minutes, which will keep the tortilla crispy. You could reheat it in the microwave, but it would go a bit soggy.
Extra Tips
- There are lots of different things you can add into this egg tortilla, but make sure that your don't overfill the flour tortilla. Once everything is poured in, you need to make sure there is a little space at the top, as it will all rise as the egg cooks.
- If you like your food with a spicy kick, then feel free to add in some red chilli flakes, or even some diced jalapeños.
- If you wanted a thicker crust, you could use two flour tortillas and double them up.
- We like to add a layer of of spinach at the bottom of the tortilla quiche, but you could mix it in with everything else.
Frequently Asked Questions
Yes! If you are feeding a crowd, then you can make a much bigger version of this tortilla quiche. Get a larger dish, and then us 3-4 flour tortillas, and overlap them in the dish. Then you can double or triple the egg and vegetable mixture too.
This will depend on how hot your oven runs and the size of eggs you have used. It took 25 minutes for us, however if your eggs are still runny then you will need to put them back in the oven for 3 minute intervals until they are set.
Yes, you don't have to scramble the eggs. You could add all the vegetables, then crack the eggs in whole and then sprinkle the cheese on top.
For a large flour tortilla, you will need a round baking dish that is around 7 inches in diameter. It will also need to be about 2 inches deep.

Ingredients
- 1 Flour tortilla - large
- 4 Eggs - whisked
- 30 g (1 cups) Spinach - chopped
- 6 Cherry tomatoes - halved
- 8 Olives - halved
- 2 Spring onions (Scallions) - sliced
- 0.25 Red bell pepper - diced
- 40 g (0.33 cups) Cheddar cheese - mature; grated
- 20 g (0.25 cups) Feta - crumbled
- Chives - to serve
Instructions
- Carefully press 1 Flour tortilla into the baking dish.
- Add 30 g Spinach to the bottom.
- Whisk 4 Eggs and add 6 Cherry tomatoes, 8 Olives, 2 Spring onions (Scallions)0.25 Red bell pepper, 40 g Cheddar cheese and about ยพ of 20 g Feta. Mix well.
- Pour the egg and veg mixture over the spinach. Top with the remaining feta.

I love my Air Fryer& use it ALL the time..Much more economical for me as I live on my own& saves heating up whole oven.. October sees our energy prices jump again, so this is why I ask( and quicker too)..So glad I found your site..
