If you haven't made coffee ice cream in the Ninja Creami ice cream maker yet, then you are seriously missing out. This is one of the first things we made in it, and it has been tested over and over again to make it perfect.
This healthy coffee ice cream is SO easy to make with just 4 ingredients. We have used just milk, rather than cream to make it lighter, and then some maple syrup to sweeten, vanilla for extra flavor and instant coffee for that coffee hit.

Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Milk - We used semi-skimmed milk (2% milk). Whole milk will result in a creamier texture, skimmed milk will make it less creamy. You could use a plant based milk too, but that definitely wouldn't be as creamy.
- Maple syrup - This is used to sweeten the homemade coffee ice cream. You could use honey too, but we like the flavor combination of maple syrup and coffee. You can use your favorite sweetener instead.
- Vanilla - Use vanilla extract, not essence, as it is natural and doesn't have artificial flavors. Vanilla bean paste works too.
- Coffee - This is Ninja Creami coffee ice cream with instant coffee. You just need the granules - no need to add any water to it. You could also use decaf if you wanted to.
Variations
Coffee - For Ninja Creami espresso ice cream, use a shot of brewed espresso instead of instant coffee. If using espresso, then it will need to replace some of the milk, otherwise there will be too much liquid. We used just instant coffee to make this quick and easy.
Protein - If you want to give this Ninja Creami coffee ice cream recipe a protein boost, then why not add a scoop of protein powder? We recommend either vanilla (leave out the vanilla extract) or chocolate flavor.
Dairy free - To make this dairy-free, you can use your favorite dairy free milk. It won't be as creamy though. We found that oat milk gave the creamiest results. Coconut milk would totally change the flavor.
Chocolate - Add some cocoa powder to make it a mocha.
Mix-ins
We like adding in chocolate chips, crushed nuts or chopped cookies as they all go really well with homemade coffee ice cream. A swirl of caramel in it works well too.
How To Make Ninja Creami Coffee Ice Cream - Step by Step
- Step 1: Add all the ingredients to a jug.
- Step 2: Mix well to combine everything.
- Step 3: Pour the mixture into the Ninja Creami pint container and put in the freezer for 24 hours.
- Step 4: Remove the lid and put into the outer bowl and put on the outer bowl lid. Put into the Creami machine and set to the Lite Ice Cream setting and spin. This will result in a crumbly texture after one spin.
- Step 5: Replace the tub in the machine and press Respin. This may take 2-4 more re-spins to achieve the perfect creamy ice cream.
Serving Suggestions
We crumbled some broken coffee beans on top to keep up with the coffee theme. But our Homemade Chocolate Sauce or some caramel sauce would be a delicious topping.
Obviously some sprinkles are always a great addition to ice cream or some crushed nuts to keep it healthier. Basically, any of your favorite toppings will work!
Extra Tips
- To combine everything together easier, you can use a milk frother or blend everything first.
- You can make this a little more indulgent by adding a splash of heavy cream in with the milk.
- Feel free to adjust the sweetness levels if you like, as the bold coffee flavor can be quite bitter.
Frequently Asked Questions
The ice cream will harden again when it goes in the freezer, so we would recommend keeping it in the Ninja container, so it can be re-spun again when you are ready to eat the leftovers
When making a healthy ice cream with just milk rather than cream, I find that you have to re-spin is more times. If after all the re-spins it's still crumbly, then add a splash of milk and re-spin again and it should be a creamy texture.
