We love anything with pistachio and this Ninja Creami Pistachio Ice Cream is a favorite with everyone in our house. It's sweet, it's creamy and it's a great high protein dessert (as we have added Greek yogurt) that feels a bit like a treat too. If you love pistachio desserts, then you need to try this.

Some of my favorite memories of walking around Rome are eating pistachio gelato. You just can't beat it and I will never be able to recreate it.

However, this pistachio ice cream in the Ninja Creami is like a healthier version of that, as it uses Greek yogurt as the base of it for a nice protein boost instead of cream. But, it still has all that ice cream texture.

Now, I will admit that this isn't the healthiest recipe out there, as we have used pistachio cream. But, the flavor is just unmatched. You can use less if you want to lower the sugar, but there is more on the variations below.

Ingredients and Substitutions

  • Greek yogurt - We used a 0% fat Greek yogurt to make it lower in fat. However, you could use full fat which would make it extra creamy. Greek yogurt is used instead of cream in this Ninja Creami Pistachio Ice Cream, but it has the same texture as ice cream. So good!
  • Pistachio cream - We picked up a big jar of this from Costco and quite frankly we are surprised it lasted long enough to make this recipe - it's that good! This stuff is super indulgent, but a little bit does go along way. You could try making your own Pistachio Cream if you prefer.

Variations

This Ninja Creami pistachio ice cream is a simple 2 ingredient recipe, so there isn't much that you can change. However, you could swap some of the Greek yogurt for heavy cream if you wanted to make it more like ice cream - it would change the nutritional value though.

As well as making your own pistachio cream, you could instead swap it for pistachio butter and a little melted white chocolate which would recreate the same flavors.

If you want to give this Ninja Creami pistachio ice cream recipe a protein boost, then why not add a scoop of protein powder? We recommend vanilla or unflavored.

How To Make Ninja Creami Pistachio Ice Cream - Step by Step

  1. Step 1: Pour the Greek yogurt and pistachio cream into the Ninja Creami pint container.

  1. Step 2: Give it a really good mix to combine it all evenly.

  1. Step 3: Put the lid on the container and freeze for 24 hours.

  1. Step 4: Remove the lid and put into the outer bowl and put on the outer bowl lid. Put into the Creami machine and set to the Frozen Yogurt setting and spin.

Mix-ins and Serving Suggestions

We like adding in chocolate chips (white chocolate works well here) or some crushed pistachios. But really, any nuts will work and will give a nice crunch. We serve it up with chopped pistachios on top.

Extra Tips

  • To combine everything together easier, you can use a milk frother or use a blender to blend everything first.
  • When putting the ingredients into the pint container, don't exceed the max fill line.
  • You can make this a little more indulgent by adding a splash of heavy cream in with the yogurt.
  • Feel free to adjust the sweetness levels by adding honey or maple syrup if you like, but we think it is quite sweet already.

How to store Ninja Creami pistachio ice cream

The ice cream will harden again when it goes in the freezer, so we would recommend keeping it in the Ninja container, so it can be re-spun again when you are ready to eat the leftovers

Why is my ice cream still crumbly?

When making a healthy ice cream with just yogurt rather than cream, sometimes you have to re-spin it more times. If after all the re-spins it's still crumbly, then add a tablespoon of milk and re-spin again and it should be a creamy texture.
