This Air Fryer Soup is a light and delicious healthy meal that is made by "roasting" the vegetables in your air fryer and then blending with stock. It couldn't be easier! It takes less than 30 minutes and it's so easy to adapt with different vegetables too. We have made a tomato and red pepper version that is really naturally sweet and creamy.
If you have ever wondered "can you make soup in the air fryer?", then the answer is yes and this is the post for you! It's so simple to make, much quicker than roasted vegetables in the oven, and there is no need to stand over the stove cooking it.
You also get all that smoky and charred flavour that you would from roasting vegetables but with using much less oil - it's a great low calorie option. This air fryer tomato soup has SO much flavour and it's a great way to use up vegetables and reduce food waste.

Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Tomatoes - We used larger tomatoes, but you can easily swap these for cherry/plum tomatoes. When choosing tomatoes, they should feel heavy, and have a little give when you squeeze them, but not be mushy.
- Garlic - You can save some time and use frozen crushed garlic. We used a lot of garlic in this, but you can adapt the amount.
- Onion - You can use a small brown onion, or some shallots.
- Red pepper - We used a red pepper as it has a sweeter flavour, but you could use any colour pepper.
- Olive oil - A good quality olive oil.
- Salt and Pepper - Generously season.
- Carrots - This helps to thicken it and also add some extra sweetness.
- Stock - A good quality vegetable stock pot. You could use chicken stock, which would have a richer flavour.
Variations
Vegetables - The great thing about making soup in the air fryer is that it's so easy to adapt. We kept it simple with the tomatoes, peppers and carrots, but there are lots of extra vegetables you could add.
Why not try cauliflower, courgette (zucchini), sweet potato, butternut squash, or even adding chickpeas for some added creaminess?
Herbs - For some extra flavour, you can add some dried herbs. Dried basil or oregano work well, but you could use an Italian seasoning blend too.
Creamy - We love a creamy soup. Blending roasted pepper gives soup a natural creaminess, but if you wanted to give it a creamy boost, then after you have blended everything together you could add some single cream or reduced fat creme fraiche.
Some grated Parmesan is delicious added too, and because it has such a strong flavour, a little goes a long way.
Curry - Why not make a curried version of this by adding a little curry powder and then blend with some coconut milk?
How to Make Air Fryer Soup - Step by Step
One: Put the vegetables into a bowl with the oil, salt and pepper. Mix well.
Two: Line your air fryer either with a liner or some parchment paper. Add the vegetables.
Three: Cook at 200°C for 25 minutes, or until the vegetables have softened. Stir halfway through cooking.
Four: Put the cooked vegetables into a blender and add the stock. Blend until smooth.
Serving Suggestions
Soup and bread is such a classic combination. But why not take the humble slice of bread and butter up a gear and make your own crunchy croutons? Not just any croutons, but cheesy, herby croutons. They are so easy to make, and a great way to use up bread that is going a little stale.
Just take a couple of slices of bread and cut into 1 inch cubes and scatter on a baking tray. Drizzle with olive oil and sprinkle with Parmesan (or grated cheddar) and sprinkle with dried oregano.
Put them into a preheated oven at 180°C/160°(fan)/350°F/Gas 4 for around 8 minutes.

Storage
Store: You can store any leftover air fryer soup in an air tight container and it will keep for up to 3 days. Just make sure it has completely cooled before it goes in the fridge.
Freeze: Once it is fully cooled, you can transfer it to freezer bags and then it can lay flat in the freezer for easier storage.
Defrost: You can defrost at room temperature and it will take a few hours.
Reheat: Reheat it on the hob (stovetop) until it is fully heated all the way through.

- This recipe is a great way to use up tomatoes that are a little past their best. So don't worry if they are a little bit squishy.
- If you want to save on some washing up, you can add the ingredients into one of these Air Fryer Baskets.
- Be careful when blending the soup that the stock is not too hot, as it can cause your blender to crack.
- For an extra tomato boost of flavour, blend some tomato puree (paste) with everything else.
- You could add a pinch of sugar to balance out the bitterness of the tomatoes.
- We blend our soup until it is smooth. However, you could just pulse it a little bit with the stick blender and leave some chunks in it.
- If you want to add a kick of heat to this, then add some red chilli flakes either whilst cooking or sprinkled on top before serving.
