Ingredients and Substitutions

- Eggs - Medium sized high welfare eggs.
- Cottage cheese - We used a fat free cottage cheese to keep it light, but you could use a higher fat percentage for cottage cheese in an omelette and it would make it extra creamy.
- Salt and pepper - Generously season your cottage cheese omelette.
- Butter - This is what it is cooked in, but you could use olive oil or an oil spray if you prefer.
- Chives - This is always my herb of choice for eggs and it goes really well with the creaminess of the cottage cheese too.
Cottage Cheese Omelette Variations
Veggie Boost - add sautéed spinach, mushrooms, tomatoes, courgette (zucchini), or bell peppers. Any quick cooking vegetables will work.
Cheesy Twist - mix in grated cheddar cheese, mozzarella, or Parmesan for extra cheesiness.
Protein - fold in cooked bacon, ham, smoked salmon, or leftover chicken.
Herbs - swap chives for parsley, dill, or basil.
Spicy Kick - add chilli flakes or diced jalapeños to the egg mixture.
How To Make a Cottage Cheese Omelette

- Step 1: In a bowl, whisk together the eggs, 1 tablespoon of the cottage cheese per egg, salt, and pepper until smooth. The cottage cheese will add creaminess and a fluffy lift. Make sure to really whisk it well.

- Step 2: Place a non-stick skillet over medium heat and add the butter (or oil). Let it melt and coat the bottom of the pan.
Pour the egg mixture into the pan. Tilt the pan slightly so it spreads evenly. Cook undisturbed for around 5 minutes minutes until the edges set.

- Step 3: Add the remaining cottage cheese to half of the omelette.

- Step 4: Carefully fold the omelette in half, cooking for another 1-2 minutes until the centre is set but still soft.
Serving Suggestions

If you want a light breakfast, then serve with a side of fresh fruit salad or add a green side salad to make it lunch or dinner-worthy. Some spring onions (green onions) on top are good for added crunch.

- Make ahead: Whisk the eggs and cottage cheese mixture in advance and store in the fridge for up to 24 hours. Cook fresh when ready.
- Batch cooking: Cook several omelettes, let them cool, then store in an airtight container in the fridge for up to 3 days.
- Freezer option: Wrap cooked omelettes individually in parchment paper, place in a freezer bag, and freeze for up to 2 months. Reheat in the microwave or oven until warm. We also like to make these and then add to bagels with a slice of cheese and wrap them up for the freezer. An easy make ahead breakfast sandwich.

- 3 Eggs - medium
- 50 g (3 tablespoon) Fat free cottage cheese - for the eggs
- 100 g (0.5 cups) Fat free cottage cheese - for the filling
- 1 tablespoon Butter
- 1 pinch Sea salt
- 1 pinch Ground black pepper
- Fresh chives - to serve; optional

- In a bowl, whisk together 3 Eggs, 50 g Fat free cottage cheese, 1 pinch Sea salt and 1 pinch Ground black pepper until smooth. The cottage cheese will add creaminess and a fluffy lift. Make sure to really whisk it well.
- Place a non-stick skillet over medium heat and add 1 tablespoon Butter (or oil). Let it melt and coat the bottom of the pan.
