Ingredients and Substitutions

- Chocolate - Using a good quality chocolate is key here, as it's the main ingredient. We used an 80% dark chocolate, which is vegan, but you could use milk chocolate if you prefer.
- Coconut oil - This helps the chocolate to melt better and make it more pourable and spreadable. It also gives it the shiny finish too.
- Berries - We used blueberries and raspberries, but strawberries and blackberries work too.
Variations
White chocolate - To make this a little less bitter (from the dark chocolate), you could add a drizzle of melted white chocolate over everything before it goes in the fridge. It also adds a nice color contrast too.
Nuts - Give this chocolate berry bark a protein boost by sprinkling some crushed nuts on top. You could even drizzle some nut butter into the melted chocolate.
Dried fruit - A more budget friendly option would be to use freeze dried berries on the melted chocolate. You could add this as well as fresh berries, and it would give a real pop of flavor.
Other fruit - Whilst this is a berry bark, there is no reason why you can't add other fruit like apple and orange. You just need to make sure that the fruit you are using it not too wet/juicy as it will seize the chocolate and make it a strange texture.
Extras - Feel free to sprinkle on some coconut, sunflower seeds or chia seeds over the chocolate berry bark.
How To Make Dark Chocolate Berry Bark - Step by Step
Prep: Line a deep 20x25cm (8x10") baking sheet with parchment paper.

- Step 1: Gently melt the chocolate and coconut oil together until silky and smooth. Either on the stovetop or in a microwave safe bowl.

- Step 2: Pour the melted chocolate into a lined baking tray and spread out in an even layer. Add the berries on top.

- Step 3: Refrigerate for at least one hour before cutting into squares.
Tips For Making The BEST Dark Chocolate Berry Bark
- Once you have washed your berries, make sure they are really dry before adding them to the chocolate. Too much moisture will change the texture of the chocolate.
- Make sure you don't spread the chocolate too thin on the lined baking tray, as the berries need to be able to sit in it and stay in the chocolate when broken up.
- You can leave the berries whole, or you can chop them up before adding to the melted chocolate.
- Leave the berry bark in the fridge for at least an hour before cutting it up.
- Why not sprinkle a little sea salt over it before it goes in the fridge. The saltiness will really bring out the sweetness of the chocolate.
- You can put it in the freezer if you prefer. Serving it from the freezer gives the berries and almost sorbet texture. Just remove it from the freezer about 10 minutes before eating.

Frequently Asked Questions
You can cut this up and then store it in an airtight container in the fridge where it will keep for about 5 days (depending on how old the berries were that you used).
Most dark chocolate is vegan, as it contains mainly cocoa solids, cocoa butter and sugar, which are all plant based. Check your dark chocolate before using it though, to make sure it is vegan.
