As soon as it's September, all I can think about it everything pumpkin spiced! If I am not making my Healthy Pumpkin Spiced Latte, then I am making this.
The dates add natural sweetness without overpowering the pumpkin, while the Greek yogurt gives the ice cream a thick and creamy texture. but keeps it much lighter and higher in protein.
Everything is mixed directly in the Ninja CREAMi tub, frozen overnight and then blended until smooth.
Ninja Creami desserts have helped me with my sweet tooth SO much and being able to have high volume healthy desserts for not many calories.
This is perfect for using up leftover pumpkin purée, especially when you do not want to make another batch of Canned Pumpkin Soup or bake a whole pumpkin pie.

Ingredients and Substitutions

- Greek yogurt - This creates a thick and creamy base. Full-fat Greek yogurt will give the richest texture, although a lower-fat version can also be used.
- Milk - Use your usual dairy milk or an unsweetened plant-based alternative.
- Dates - Soaking the dates softens them so they blend more easily into the ice cream mixture. Medjool dates work particularly well because they are naturally soft and caramel-like.
- Pumpkin - Make sure you use plain pumpkin purée rather than sweetened pumpkin pie filling.
- Vanilla - Enhances the sweetness and complements the warm spices. Make sure you use extract and not essence.
- Spices - We use cinnamon, nutmeg and ground ginger for that familiar pumpkin spice flavour. Just a small pinch of salt balances the sweetness and brings out the flavour of the pumpkin and spices.
Ninja Creami Pumpkin Ice Cream Variations
Sweeter - The level of sweetness will depend on the dates you use and the natural sweetness of the pumpkin. Add another soaked date for a sweeter ice cream, or mix in a little maple syrup before freezing.
Remember that frozen desserts taste less sweet once frozen, so the unfrozen mixture should taste slightly sweeter than you want the finished ice cream to be.
Extra spice - Increase the cinnamon, ginger or nutmeg to suit your taste. You could also use a ready-made pumpkin spice blend instead of adding the spices separately.
Cloves and allspice are quite strong, so only add a very small pinch if your spice blend does not already contain them.
Dairy Free - Use a thick dairy-free Greek-style yogurt and your preferred plant-based milk. Coconut yogurt will create a rich texture, although it will add a noticeable coconut flavour.
Oat milk has a more neutral flavour and works especially well with the pumpkin and spices.
Extra protein - Add a small amount of vanilla protein powder. Protein powder absorbs liquid, so you may need to add a little more milk to stop the mixture becoming too thick.
Cheesecake - Replace some of the Greek yogurt with cream cheese before blending. This gives the ice cream a richer texture and a slightly tangy pumpkin cheesecake flavour.
Crushed digestive biscuits can be added as a mix-in after the first spin.
How To Make Pumpkin Ice Cream
- Step 1: Soak the dates for 10 minutes in boiled water.
- Step 2: Drain the dates and put them into the Ninja Creamy pint tub with the rest of the ingredients.
- Step 3: Mix well. Put the lid on the tub and freeze for 24 hours.
- Step 4: Remove the lid and put the frozen tub into the outer bowl and put on the outer bowl lid. Put into the Ninja Creami machine and set to the Frozen Yogurt setting and spin. This may result in a crumbly consistency.
- Step 5: Replace the tub in the machine and press Respin. This may take 1-2 more re-spins to achieve the perfect creamy consistency.
Serving Suggestions
Serve the Ninja Creami pumpkin spice ice cream on its own or add a few simple toppings for extra texture.
Try it with:
- Chopped toasted pecans or walnuts.
- Crushed ginger biscuits.
- A spoonful of almond or cashew butter.
- Dark chocolate shavings.
- Crushed digestive biscuits for a pumpkin pie-style topping.
For an easy autumnal dessert, serve a scoop alongside warm baked apples or pears. The contrast between the warm fruit and cold spiced ice cream is SO good.
How To Store Leftovers
Ninja CREAMi ice cream is at its creamiest immediately after processing.
If you have leftovers, smooth the surface of the ice cream in the tub, replace the lid and return it to the freezer. When you are ready to eat it again, process it using the same frozen yogurt setting.
You may need to add another small splash of milk and use the Re-Spin setting to restore the creamy texture.
Do not refreeze the ice cream if it has been left at room temperature for a long time or has completely melted.

- A crumbly texture after the first spin is normal. Add a splash of milk and use the Re-Spin setting.
- Add milk carefully when re-spinning. Too much can make the ice cream soft or runny.
- Keep the top of the frozen mixture flat. If it freezes with a raised bump, carefully level it before placing the tub into the machine.
Frequently Asked Questions
For best results, eat it straight after spinning. If you refreeze leftovers, smooth the top flat before freezing again, then re-spin before serving.
