These blender baked oats aren't like your usual baked oats recipes, that taste more like an oat bar. Because all the ingredients are blended together, you get a really smooth batter and when baked it turns out all cake like. No flour, but it honestly tastes like banana bread.
These baked oats banana bread are a great way to use up bananas that are going a bit brown, and it freezes really well too. A great way to increase your fibre too with fibre packed oats.

Banana Bread Baked Oats Ingredients

- Oats - Use rolled outs, not quick cook oats.
- Eggs - Medium sized.
- Banana - Really ripe bananas, and starting to go brown will give the best flavour and sweetness.
- Maple syrup - You could use honey instead.
- Milk - We used skimmed, but any milk will work, even non-dairy milk.
- Vanilla - Use vanilla extract, not essence.
- Baking powder - This helps it to rise and get cake-like.
- Cinnamon - You could use ground ginger instead.
- Salt - This helps to bring out the sweetness.
- Chocolate chips - We used dark chocolate, but milk or white would work. These are optional and you could leave them out to make it just naturally sweetened.
Variations
Individual portions - You could divide the mixture into 6 individual greased ramekins for single servings. You would just need to adjust the cooking time as they would cook quicker.
Nuts and seeds - For extra protein and fibre, you could blend some chia seeds or flax seeds into the batter. You could then fold some chopped nuts in before baking.
How To Make Banana Bread Baked Oats
Prep: Preheat your oven to 190°C/170°C(fan)/375°F/Gas 5. Grease a 20cm/8in Baking dish.

- Step 1: Put all of the ingredients into a blender.

- Step 2: Blend until smooth.

- Step 3: Pour the blended oat mixture into the greased baking dish - we used this enamel baking dish.

- Step 4: Bake for 20 minutes.
What To Serve with Banana Bread Baked Oats
We serve with this a drizzle of peanut butter and some Greek yogurt for extra protein. You could then add lots of fresh berries or make a fruit compote with frozen berries and chia seeds (just simmer them together in a pan for 15 minutes until thickened).
For something a little more indulgent, and what my kids love for a Sunday brunch, you could serve this banana bread baked oats with some whipped cream and a drizzle of maple syrup.

- Use a high powered blender to get the batter as smooth as possible.
- If you don't have a blender, then you could use oat flour (or even just whole oats) instead, and mash the bananas and mix everything together. It would change the texture, and it wouldn't be cake like. But it would still be delicious.
- To make this vegan, you can use flax egg and a plant based milk.
- To ensure this recipe is gluten free, make sure to use certified gluten-free oats.

I’m a little confused as to whether this serves 1 person or 4? It say 4 at the top of the recipe but the quantities don’t look anywhere near enough for 4 people. 2 eggs and 1.5 cups oats for 4?Must be a very small portion each?

Yes, this serves 4 portions at 318 calories each. And then you would serve it with Greek yoghurt, fruit, nut butter etc. A quarter of this is plenty with yoghurt, but as with all my recipes you can always serve yourself up a bigger portion and adjust the nutritional info.
