Turkey is a great choice when trying to make healthier versions of your favourite meals, because it's such a lean meat. It can be a little dry though, so adding lots of feta and spinach helps with that. And then load it up with homemade tzatziki.

Ingredients and Substitutions

A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Turkey mince - Using a less than 5% ground turkey mince helps to make these burgers really lean. You could use a higher fat percentage, but this would change the nutritional information. We used 2% fat. You could use ground chicken if you prefer.
- Feta cheese - It's not a Greek dish without feta, right? This adds plenty of flavour, and some creaminess too. Try to use authentic feta, as you really will taste the difference.
- Red onion - You can swap this for shallots, which will give a sweeter flavour. Make sure this is diced finely, otherwise the burgers will fall apart.
- Fresh spinach - This is an easy way to give the burgers a green vegetable boost. Make sure to finely chop it, if you want it to be more "hidden".
- Garlic - Fresh is always best, but you can use ready chopped garlic in a jar if you want to save some time.
- Sun-dried Tomatoes - These not only add flavour, but they help to keep the burgers moist too.
- Dried parsley and Oregano - The perfect Greek herbs to use.
- Burger toppings - Bread rolls, homemade tzatziki sauce, lettuce and tomato.
Variations
Grill or air fryer - You can cook these on the grill/BBQ, but you will need to cook them on tin foil, because they will fall apart easily on the grill. You can also cook them in the air fryer at 200°C/400°F for about 15 minutes.
Bunless - If you want to make this a low carb option, then swap the bread roll for a couple of giant lettuce leaves.
Olives - To really boost the Greek flavours, why not add some chopped olives to the burger patties? You wouldn't need to add as much salt if you did this. Kalamata olives are my favourite.
How To Make Turkey and Feta Burgers

- Step 1: Put the turkey mince, feta, onion, spinach, garlics, un-dried tomatoes, oregano, parsley, salt
and pepper into a large bowl. - Step 2: Using your hands, mix it all together.

- Step 3: Form the mixture into 4 burger patties and then put in the fridge for 30 minutes.

- Step 4: Heat the oil in a large pan over a medium heat and add the patties.

- Step 5: Fry the burgers for 7-8 minutes each side, turning regularly. Alternatively, put them under the grill for 15 minutes, turning half way through.
- Step 6: Serve on the bread rolls with lettuce, tzatziki and tomato slices.

What To Serve with Greek Turkey Burgers

Dannii's Top Tips
- Don't overwork the burger mixture, as that can make them dry out. Mix everything until just combined.
- Put the burgers in the fridge for at least 30 minutes before cooking so they firm up and hold together (especially important if you are cooking them on the BBQ).
- To form the patties, use cold, slightly wet hands - this will stop the mince sticking to your hands.
- Use a meat thermometer to make sure the burgers are cooked fully. The cooked internal temperature of turkey mince should be 165°F/74°C. You don't want to overcook the burgers.
- These are really thick burgers. You could make them into 6 smaller burgers, and they would cook quicker.

You can form the burger patties in advance then keep them in the refrigerator until you are ready to cook. They would be good in the fridge for about 24 hours. The tzatziki can be made in advance too, so then all you have to do is cook the burgers and pile everything up.
Yes, you can freeze turkey burgers. Put them on a tray and freeze them. Once they are fully frozen, you can stack them with baking paper between them and then put in a freezer bag. Once fully defrosted, they can be cooked as normal.
These can be stored in an airtight container in the fridge for up to 3 days.

Greek Turkey Burgers
Ingredients
- 400 g (14 oz) Turkey mince
- 60 g (0.5 cups) Light Feta - crumbled
- 50 g (1.75 oz) Red onion - finely diced
- 40 g (1.5 oz) Sun-dried tomatoes - finely diced
- 40 g (1.33 cups) Spinach - finely chopped
- 3 Garlic clove - crushed
- 0.5 tablespoon Dried oregano
- 0.5 tablespoon Dried parsley
- 2 pinch Sea salt
- 2 pinch Ground black pepper
- 1 teaspoon Olive oil
- 4 Bread rolls
- 8 tablespoon Tzatziki
- 1 Little gem lettuce - leaves separated
- 2 Tomatoes - large; sliced
Instructions
- Put 400 g Turkey mince, 60 g Light Feta, 50 g Red onion, 40 g Spinach, 3 Garlic clove, 40 g Sun-dried tomatoes0.5 tablespoon Dried oregano, 0.5 tablespoon Dried parsley, 2 pinch Sea salt and 2 pinch Ground black pepper into a large bowl.
- Using your hands, mix it all together.
- Form the mixture into 4 burger patties and then put in the fridge for 30 minutes.
- Heat 1 teaspoon Olive oil and fry the burgers for 7-8 minutes each side, turning regularly. Alternatively, put them under the grill for 15 minutes, turning half way through.
- Divide half of the 8 tablespoon Tzatziki between the 4 Bread rolls Separate the leaves of 1 Little gem lettuce and put onto the tzatziki. Add slices of 2 Tomatoes and then the burgers. Top with the remaining tzatziki and serve.

If it is a treat meal, then we will have the bun and homemade chips. If not, then usually we use a lettuce wrap instead of the bun and have sweet potato chips with it.
