Smoked salmon is the best omelette filling. It feels really luxurious, but it is a great way to add some extra protein to an omelette, without adding a lot of extra calories.

Ingredients and Substitutions

- Eggs - We used medium sized eggs.
- Smoked salmon - You could use leftover cooked salmon, but we used smoked salmon for omelettes because of how quick and easy it is to use, and the incredible flavor.
- Cheese - This smoked salmon omelette recipe uses cream cheese, but you could use cheddar or a creamy goat's cheese.
- Greens - We used rocket (arugula), but you could use spinach instead.
- Herbs - Chives are delicious with salmon. Fresh dill also goes really well.
Smoked Salmon Omelette Variations
The great thing about an omelette is that it is so easy to adapt. Once you have the base of the eggs, there are lots of options for the fillings.
We used smoked salmon, but you could use leftovers of a cooked salmon fillet. Just flake it up and add it the same way.
Almost any cheese will work. We like a soft cheese, which is why we used cream cheese for this salmon omelette, but a soft goat's cheese would work too. You could also crumble in some feta cheese. But, if all you had was some cheddar or mozzarella, then that would work too.
This is a great opportunity to add some extra veggies. We added rocket (arugula) for greens, but spinach would work too. You want something that is quick cooking, or can be eaten raw. So, some sliced bell peppers would be a delicious addition.
You could use one whole eggs and one egg white, rather than two whole eggs. You would still get a protein packed and filling meal, but it would be lower in fat because one of the egg yolks has been removed.
How To Make a Smoked Salmon Omelette - Step by Step
- Step 1: Whisk the eggs. Heat a small amount of butter or oil in a frying pan and add the eggs. Swirl the pan gently to cover the base with the eggs. Cook for 10-20 seconds.
- Step 2: With a spatula, push the omelette in from the outside to the uncooked centre, until the eggs are coked.
- Step 3: Add the cream cheese, salmon, chives and rocket.
- Step 4: Fold the omelette in half and leave in the pan for a further 20-30 seconds.
Serving Suggestions
If we are serving this omelette with smoked salmon for breakfast, then we like to serve it with some bread like our Easy White Loaf or Homemade Bagels or some sourdough toast and avocado on the side. For a more filling breakfast, then our Breakfast Hash is delicious with this.
We also think some capers sprinkled on top before serving is a delicious addition!
However, an omelette is good any time of day. We like it for lunch with a salad like our Little Gem Salad or Healthy Caesar Salad. You could also serve it for dinner with some Air Fryer Potato Wedges and some greens like Roasted Tenderstem Broccoli.
Extra Tips
- Make sure you have all your fillings ready before you put the eggs in the pan. Omelettes cook quickly and you don't want the eggs to overcook whilst you are still chopping and shredding.
- Don't over whisk the eggs, as the omelette won't have a fluffy texture.
- To cook the omelette, use a pan with sloped sides for ease of moving the mixture during cooking and also so you can slide it out when it has cooked. Make sure the pan isn't too big either, as the omelette will be too thin and split when folding.
- When you first pour the mixture into the pan, leave it for 30 seconds to allow the bottom to set before moving the sides in.
- The omelette mixture will still be a little wet when you add the fillings and fold it over, as it will still continue cooking as it is tipped out of the pan from the residual heat.

This is best eaten straight away, so only make as many as you need.
Once you have poured the whisked egg mixture into the pan, it will take around 60-90 seconds for the eggs to set before you can add the filling and fold the omelette over to finish cooking for a minute or so.
If you want a fluffier omelette, then you can add a splash of milk to the egg mixture, but you don't have to.

- 50 g (1.75 oz) Smoked salmon
- 1 teaspoon Fresh chives - chopped
- 10 g (0.5 cups) Rocket (arugula)
