We all know and love avocado toast, but this is a little twist on it to add some extra flavour and nutrition. Tomato Avocado Toast is a base layer of toasted sourdough, topped with mashed avocado, crumbled feta and some roasted tomatoes and then finished off with some fresh chives. A wholesome, delicious breakfast, brunch, or light lunch.

- Bread - Sourdough is always my go-to bread. But any type of bread will work here. For higher protein, why not make my Cottage Cheese Bagels?
- Avocado - Make sure use a fresh and ripe avocado as a browning one will really change the flavour. Got a brown one? Don't waste it - add it to a smoothie.
- Tomatoes - Use sweet and ripe cherry tomatoes and roast them in olive oil.
- Cheese - The creaminess of feta cheese goes perfectly with avocado and tomatoes. You could use parmesan or a goat's cheese instead.
- Herbs - I used chives, but fresh basil is a good alternative on tomato avocado toast.
Variations

Mediterranean style: Add olives, cucumber, and a drizzle of olive oil for Mediterranean vibes. A balsamic glaze works well too.
Spicy kick: Mix chilli flakes/red pepper flakes into the avocado mash or drizzle with hot honey or some Buffalo hot sauce.
Herb swaps: Replace chives with basil, parsley, or coriander (cilantro).
Extra nutrition: Finish it off with a sprinkling of hemp hearts seeds.
How To Make Tomato Avocado Toast
Prep: Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.

Step 1
Put the tomatoes onto a baking tray and drizzle over the oil. Move the tomatoes around to coat them in the oil.

Step 2
Put the tomatoes into the preheated oven and roast for 15 minutes, until the skins start to split.

Step 3
Meanwhile mash the avocado to your desired texture.
Step 4
Toast the slices of bread either in a toaster or a pan.

Step 5
Spread the mashed avocado over the toast. Divide the feta between the toast and top with the tomatoes and chives.
Tomato Avocado Toast Meal Prep and Storage Tips
- Roasted tomatoes: Roast in advance and store in an airtight container in the fridge for up to 4 days. You can also use them in salads, pasta dishes or in curries.
- Avocado mash: Best made fresh, but you can prep it a few hours ahead. To minimise browning, add lemon or lime juice and press plastic wrap directly against the surface before refrigerating.
- Bread: Pre-slice and freeze sourdough. Toast directly from frozen when you need it.
- Assembled toast: Best enjoyed immediately to keep the bread crisp, but you can pack it for lunch by keeping the toast, avocado, and toppings separate and assembling right before eating if you need a quick win at your desk.

- Use ripe avocado. They should give slightly when gently pressed.
- Don't skip seasoning. A pinch of salt brings out the natural flavour of avocado and tomatoes.
- Roast the tomatoes ahead of time. Roast a larger batch and keep in the fridge for quick toast toppings all week. I love adding them to salads and pasta too.
- You can also cook the tomatoes in the air fryer to save some time. They will take about 7-8 minutes at 200°C/400°F.

- 1 Avocado
- 30 g (1 oz) Light Feta - crumbled
- 2 tablespoon Chives - chopped
