This Chopped Turkey Salad with Beans is a mixture of deli turkey, white beans, lettuce, salad veggies, fresh herbs, cheese and a mustard dressing. A little bit of everything in each bite, this is great for meal prep and high protein lunch on the go.

This deli turkey salad recipe really has it all! It is high in protein from the turkey and beans, but it packed full of color with the cucumber, tomatoes, peppers and fresh herbs. All brought together with a light lemon and mustard dressing.
This deli turkey salad is light, crisp and protein packed. As simple as just chopping it all up and throwing it together.
We always buy plenty of turkey slices in our weekly shop, as they are great for lunch boxes and Picky Plates. This salad is a great way to use up a little bit of deli turkey, as it's all chopped up so a little goes a long way.

Ingredients and Substitutions

- Greens - This turkey chopped salad has a base of romaine and arugula (rocket). But any lettuce works. You could add spinach to give it an iron boost.
- Cucumber - A regular English cucumber is what is used her. You could change it up by using diced pickles instead, or doing half and half.
- Tomatoes - Cherry tomatoes add a pop of color and stop the salad from getting too dry. To give it even more of a burst of tomato flavor, you could add some diced sun-dried tomatoes.
- Peppers - Any colored peppers work. For extra flavor, use Roasted Red Peppers.
- Beans - This is a turkey and bean salad, as they really bump up the protein. We used lima beans (butter beans), but white kidney beans (cannellini beans) work itoo. Garbanzo beans (chickpeas) work for a budget friendly version.
- Onions - Scallions/green onions (spring onions), add crunch, but can be swapped for diced red onion for extra color.
- Herbs - Fresh dill goes perfectly with this salad. It can be swapped for chives though.
- Pomegranate - You get a pop of flavor in every bite with some pomegranate seeds. These are optional though.
- Turkey - This is a salad with deli turkey, so get the best quality one that you can. You can also use diced turkey, if you have leftovers from our Air Fryer Turkey Breast.
- Cheese - Take this salad to the next level with a little crumbled feta. It can be swapped for shredded Parmesan though.
- Dressing - This is a mixture of extra virgin olive oil, lemon juice, salt and pepper and wholegrain mustard. You could use Dijon mustard to make it creamier.
Variations
Sandwich filling - You can put all of these ingredients onto a large chopping board, with the dressing, and then use a large sharp knife to chop it all up really small. You can then use it as an epic sandwich filling.
Meat - The turkey can be swapped for chicken or ham instead if that is all you can find. Leftover cooked chicken breast can be used too.
Salad - Really, any salad ingredients work here. You could add some diced avocado which adds a nice creaminess, or some corn, celery, carrots or cabbage.
Carbs - If you wanted to bulk this chopped turkey salad out and make it go further, then why not add some carbs to it. Cooked potatoes, rice and croutons all work. Have you tried our Air Fryer Croutons before?
Crunch - Finish the salad off with some crunch by adding nuts and seeds. Walnuts, flaked almonds, pecans or sunflower/pumpkin seeds all work.

- Simply add all of the ingredients to a large mixing bowl. Drizzle over the dressing and give it all a good mix.
Serving Suggestions

Ingredients
- 60 g (1 cups) Romaine lettuce - chopped
- 20 g (1 cups) Rocket (arugula)
- 0.5 Cucumber - diced
- 90 g (3 oz) Deli roast turkey slices - chopped
- 60 g (0.5 cups) Butter beans
- 30 g (0.25 cups) Feta - crumbled
- 5 g (0.25 cups) Fresh dill
- 3 Spring onions (Scallions) - chopped
- 2 portion Lemon vinaigrette
- 2 Mini bell peppers - sliced
- 8 Cherry tomatoes - quartered
- 40 g (0.25 cups) Pomegranate jewels
Instructions
- Add all of the ingredients to a mixing bowl.
- Drizzle over the dressing.
- Give it a good mix.
