This isn't just any cheese sandwich, this is an epic cheese sandwich! We have taken a classic lunchtime sandwich and given it a serious upgrade. Chunky slices of bread, thick slabs of cheddar with some crumbly Wenslydale and crunchy vegetables with a tangy chutney. Never have a boring sandwich again!

We love a cheese sandwich. I am pretty sure we all grew up on them, as they were cheap, filling and easy. I think they might have been one of the first things I ever made for myself as a kid, as you really can't get it wrong.

This is far removed from the ones I used to make. The mixture of cheese makes it super creamy and indulgent, but the crunchy salad lightens it up a little.

Why you will love it

  • Sandwich upgrade - We have all probably had more bland supermarket sandwiches than we would like to admit. But there is no need to eat a boring sandwich again. This is so easy, but packs a serious flavour punch.
  • Adaptable - Feel free to use this recipe as a base and then adapt it with what you have on hand. We have included some of our favourite variations of this sandwich below.
  • Ready in 10 minutes - You can have an incredible sandwich ready in under 10 minutes. That's probably quicker than it would take you to walk to the shop to buy one, and I bet this one would be better!

Ingredients needed

All the ingredients needed for this recipe with text overlay labels.
  • Bread - We used slices of Rye bread as we love the colour and the flavour. However any slices of your favourite loaf would work.
  • Cheese - This is the star of the sandwich and where you really don't want to skimp on quality. We used a really good quality mature cheddar and some Wenslydale for added creaminess. More options are below.
  • Lettuce - This adds a nice crunch to the sandwich. We used little gem, but iceberg or romaine would work too.
  • Tomato - An easy way to add some freshness to the sandwich. A few slices of cherry tomato add a lovely pop of colour too. Use beef tomatoes if you want them thicker.
  • Carrot - Another easy way to add some crunch and colour. Carrot and cheese is a delicious combination too.
  • Chutney - This just brings everything together. We used a caramelised onion chutney as the onions and cheese go so well together.

Step by step

One: Butter the bread and then spread over the chutney.

Variations

Bread - This is what holds the whole sandwich together. We used rye bread as it is sturdy and there are a lot of heavy fillings in this. However, any sliced bread will work. You could also swap sliced bread for baguette, bagel or even a croissant for something a little different.

Cheese - This is the star of the sandwich, so try to go for the best quality you can. We used mature cheddar and Wenslydale. The Wenslydale has the added bonus of having cranberries in it for a little bit of sweetness. You could also use brie, Swiss, stilton, edam or a soft and creamy goats cheese. Any cheese would work, just don't mix lots of different flavours together.

Salad - This is a heavy sandwich, so some salad really lightens it up, but also adds some colour. We used lettuce, tomatoes and carrot, but you could also include some roasted red peppers, cucumber, chopped celery or even some apple.

Sauce - Chutney and cheese is the perfect combination. We used a caramelised onion chutney, but a chilli chutney would work too. You could just use a sandwich pickle instead if you wanted to.

What to serve with an Epic Cheese Sandwich

This is a pretty epic sandwich, it's in the name! But we do love something extra on the side if we want a really filling meal or if we are serving these up to guests. Make loads of sandwiches and serve them up for lunch for a crowd with some of our delicious sides:

Extra tips

  • Make sure to use a really sturdy bread, as there is a lot of filling in this sandwich and you don't want it all falling through the bread.
  • Add some spice by using a chilli jam instead of chutney. 
  • Flavoured cheese is an easy way to add some extra flavour to this sandwich.
  • If you are using 2 different cheeses, try not to use strong flavoured ones for both, as they will battle against each other.

Frequently Asked Questions

Is a cheese sandwich healthy?

No, this isn't the healthiest sandwich there is due to all the cheese. An epic cheese sandwich should have a good amount of cheese in our opinion. But, this isn't an every day lunch. Add some extra nutrients with the salad.

What is the best cheese for a cheese sandwich?

We love something with lots of flavour. Which is why we made sure to use an extra strong mature cheddar.

Does the bread need buttering?

No, you don't have to butter it because the chutney makes sure it isn't dry. However, we find that buttering the bread takes this sandwich to the next level.

How to store a cheese sandwich?

If you are making this for lunch the next day, then wrap it in foil and then put it in the fridge. It will be good for 24 hours, but it will start to get a bit soggy after that.

Is this gluten free?

If you use a gluten free bread and make sure there is no cross contamination, then this can be a gluten free sandwich.

How to make a vegan cheese sandwich.

If you use a vegan spread (or leave the bread plain) and vegan cheese, then this can be a vegan sandwich.

How can I spice up a cheese sandwich?

If you love your food with a bit of spice, then you could mix a little curry powder in to the butter before spreading it on the bread, or you could use a chilli jam rather than a chutney.

Ingredients

  • 4 slice Bread
  • 1 tablespoon Butter
  • 100 g (3.5 oz) Mature cheddar - sliced
  • 90 g (3 oz) Wensleydale and cranberry cheese - sliced
  • 60 g (0.25 cups) Chutney
  • 1 Carrot - finely grated
  • 1 Little gem lettuce - chopped
  • 5 Cherry tomatoes - sliced

Instructions

  • Spread 1 tablespoon Butter over 4 slice Bread and then spread 60 g Chutney over two slices.
  • Add 100 g Mature cheddar and 90 g Wensleydale and cranberry cheese.
  • Top with 1 Little gem lettuce and 1 Carrot.
  • Finish with 5 Cherry tomatoes and another slice of bread.
