Ingredients and Substitutions

A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Mango - Frozen mango gives the cooler its thick, icy texture without needing to add lots of ice. You can use fresh mango, but the finished drink will be thinner and less chilled. Freeze the mango pieces beforehand or add a handful of ice cubes if using fresh fruit.
- Passionfruit juice - Use a passionfruit juice drink, juice blend or tropical juice containing passionfruit. Different brands vary in sweetness and strength, so you may need to adjust the quantity. A mango and passionfruit juice blend will give an even stronger mango flavour, while a tropical juice adds more pineapple or orange notes. Pure passionfruit juice can be quite sharp and concentrated. If using it, dilute it with water or another fruit juice before blending.
Mango and Passionfruit Cooler Variations
Sweeter - The drink should usually be sweet enough without adding anything else. However, if your juice is quite sharp, blend in a little honey, maple syrup or simple syrup. Taste the cooler before adding sweetener, as frozen mango can be naturally very sweet.
Thicker - Add extra frozen mango for a thicker, more spoonable drink. You could also add a handful of ice, although too much ice can dilute the fruit flavour.
Sparkling - Blend the mango with only enough juice to make it smooth, then top up the glass with sparkling water. Stir gently rather than blending the sparkling water, as it will foam up.
Creamy - Add a spoonful of Greek yogurt, coconut yogurt or a splash of coconut milk. This changes it from a juice-style cooler into something closer to a smoothie.

Money Saving Tip!
Frozen mango is often cheaper than buying ripe fresh mangoes, particularly when mangoes are out of season. It also reduces food waste because you can use exactly the amount you need and return the rest of the bag to the freezer.
Look for larger bags of supermarket own-brand frozen mango, as these usually have the lowest price for the weight.
Passionfruit juice drinks are usually much cheaper than pure passionfruit juice and work perfectly well in this recipe. You can also use whatever tropical juice you already have rather than buying a specific brand.
Reusable takeaway-style cups and straws can help give it the coffee shop feel without the coffee shop price.
Leftover Storage
This mango and passionfruit cooler is best enjoyed immediately after blending, while it is thick and icy.
Leftovers can be stored in a covered jar or bottle in the fridge for up to 24 hours. The drink will become thinner as the mango defrosts and may separate slightly, so shake or stir it well before drinking.
You can also pour leftovers into an ice cube tray and freeze them. Add the frozen cubes to a future cooler, smoothie or glass of tropical juice.
Another option is to freeze the mixture in ice lolly moulds for a simple frozen treat. These will keep in the freezer for up to three months.

Dannii's Top Tips
- Use the frozen mango straight from the freezer. Allowing it to thaw will make the cooler thinner and less icy.
- Add the juice to the blender before the mango if your blender sometimes struggles with frozen fruit. This helps the blades move more easily.
- Start with less juice than you think you will need. You can always add more, but it is harder to thicken the drink again without adding extra mango.
- Blend until completely smooth. Small pieces of frozen mango can block a straw.
- Chill the serving glasses in the fridge or freezer beforehand to help the cooler stay cold for longer.
- Avoid adding too much ice, as the frozen mango already provides the chilled texture. Excess ice will water down the flavour as it melts.

Frequently Asked Questions
Yes, although you may need to let the frozen mango sit at room temperature for five minutes first. Cut any particularly large chunks into smaller pieces and add the juice before the fruit.
Blend in short bursts, adding extra liquid if the blender is struggling.
