We love cooking potatoes in the air fryer, and these potato wedges are our favourite. They are lower in calories than potatoes deep fried in oil, and they get crispier than they would if you cooked them in the oven - which is why air fryer potato wedges are our favourite method.
Recipe update: This recipe was originally published on 24 February 2022 and was fully retested in 2026. I've added new photos, clarified the instructions, updated the cooking tips and refreshed the post to reflect my latest testing.
We have tested these air fryer wedges close to 100 times, as they are a weekly staple in our house. We have tried different temperatures, different potatoes, soaking vs non-soaking, so we know this recipe works and is well loved.
These crispy air fryer potato wedges have golden-brown edges and fluffy centres, with 25 minutes of cooking at 180°C. I tested the recipe using 500 grams/1.1lb of potatoes in a Ninja Dual 9.5 litre air fryer.
Drying the wedges thoroughly and avoiding an overcrowded basket made the biggest difference to crispness.

Ingredients and Substitutions

- Potatoes - Whilst you can use any potatoes, some definitely work better than others. If you are in the UK then Maris Piper or King Edwards are the best. Russet Potatoes or Yukon Gold are the best potato varieties in the US to get crispy potato wedges in the air fryer.
- Oil - Regular olive oil is my preference, but avocado oil, sunflower or vegetable oil also work.
- Garlic - We used garlic granules because they stick to the wedges better than fresh. However, fresh has a stronger garlic flavour but does tend to burn which is why we haven't used it here.
- Seasoning - We used an Italian seasoning blend and then added some Parmesan and parsley for serving.

How to Make Air Fryer Potato Wedges

- Cut the potatoes: Cut the potatoes into 2cm thick wedges.

- Soak the wedges: Add the cut wedges to a bowl of cold water and soak for at least 30 minutes.

- Dry the wedges: Drain them and pat dry thoroughly.

- Preheat: If your air fryer requires pre-heating, then do this now.
- Coat with oil and seasoning: Add the dried wedges to a bowl with the rest of the ingredients.

- Mix: Toss well with your hands so that all the wedges are coated.

- Arrange in the basket: Arrange a single layer of wedges, skin side down, in the bottom of the air fryer basket. Cook in batches if needed.

- Air fry and shake: Cook on the Air Fry setting at 180°C for 25 minutes, shaking the basket twice during cooking.
- Check for doneness and finish: Then serve with chopped fresh herbs (we used parsley) and grated Parmesan (both optional).
💡 Tip: For vegan wedges, omit the Parmesan or use a vegan alternative.
How To Cut Potato Wedges Evenly
- Cut the potato lengthways.
- Cut each half into three or four wedges.
- Aim for eight similarly sized wedges per medium potato. This should give you around 2cm wedges at the thickest part. Use similarly sized potatoes.
Do The Potatoes Need Soaking First?
In short - yes. If you want the best possible results for your air fryer potato wedges, and you want them to be crispy, then you need to soak them for at least 30 minutes.
Place the potatoes in a large bowl of water and leave for 30 minutes and then drain - this removes the excess starch.
However, you then need to make sure they are really well dried, as the excess water will stop them from getting crispy. Either put them in a tea-towel and rub dry or pat them dry with a paper towel.
Soaking and drying them will make them crispier and gives them a nice dark colour. Definitely worth the extra 30 minutes.
Air Fryer Potato Wedge Seasoning
Spicy - Instead of the Italian seasoning, you can add some red chilli flakes and smoked paprika for a spicy twist.
Everything Bagel - It's called everything seasoning for a reason. Our homemade Everything Bagel Seasoning is a delicious addition to air fryer potato wedges as it has a perfect balance of flavours.
Rosemary and sea salt - Cracked sea salt and fresh chopped rosemary tossed with the plain cooked chips (cooked in just oil) at the end.

How To Get Crispy Potato Wedges in the Air Fryer
After a lot of testing, there are a few key things you need to do to get the crispiest potato wedges in the air fryer.
- Cut the potatoes evenly.
- Soak the wedges for 30 minutes.
- Dry the potatoes thoroughly.
- Do not add wet seasoning.
- Do not overcrowd the basket - arrange them in a single layer and cook in batches for maximum crispness. Once all the batches are cooked, you can then reheat them all together for 3-4 minutes before serving.
- Shake or turn at stated times.
- Serve immediately.
Serving Suggestions

Air Fryer Potato Wedge Prep and Leftovers
Prep - You can prepare these in advance by soaking them until you are ready to use them.
Leftovers - If you have leftovers, then you can store them in an airtight container in the refrigerator for up to 3 days. They will be a little soggy, however you can heat them up again in the air fryer for 5 minutes at 200°C and it will crisp them up again.
Freeze - You can freeze these raw or cooked. Coat them in oil and seasoning and then freeze in a single layer on a tray and then transfer to a freezer bag. You can freeze them the same way when cooked.

Flash freeze Arrange the wedges on a baking tray and put into the freezer.

Store: Once frozen, transfer to a freezer bag.
You can cook raw potato wedges from frozen, you will just need to add 10-15 minutes onto the cooking time.
To reheat frozen cooked potato wedges, put them in the air fryer at 170°C for 6 minutes.

Frequently Asked Questions
You don't have to soak them, but we would recommend that you do. Soaking the potatoes in water once they are cut draws out the excess starch and once they are patted dry it will give crispier wedges. You need to soak them for at least 30 minutes. However, soaking them for 2 hours will given even crispier wedges.
Cooking times will vary depending on the potatoes you use, the thickness of the wedge and your air fryer as they all cook differently. If yours are still a little hard, then put them on for 2 minutes at a time until cooked.
The most common causes are overcrowding the air fryer basket, not drying the potatoes thoroughly after soaking, or cutting the wedges too thick. Arrange them in a single layer, dry them really well and aim for wedges around 2cm thick. All air fryers cook slightly differently, so you may also need to add a few extra minutes.
