It's as simple as mixing the baby potatoes with oil and seasoning and then putting them in the air fryer to cook. Packed full of flavour, but SO simple to make.
The great thing about using an air fryer, is that you get all the crispiness of roasting, without all the oil and much quicker too. You can serve them with pretty much anything!

Ingredients and substitutions
- Baby Potatoes - Any baby (new) potatoes will work for this recipe. Try to make sure they are an even size (you can cut them in half if needed) to ensure that they cook at the same rate.
- Oil - A good quality olive oil is needed for air fryer new potatoes.
- Italian seasoning - This is where all the flavour comes from. You can make your own, or use a good quality store bought seasoning blend.
- Garlic granules - Although Italian seasoning is already heavy on the garlic, we added extra because you can never have too much garlic.
- Paprika - Adds a lovely smokiness to the potatoes, as well as some colour.

How to make air fryer baby potatoes - Step by step
One: Put the potatoes, oil, seasoning, garlic and paprika into a bowl.
Two: Give it a good mix to ensure all the potatoes are coated in the oil and seasoning.
Three: Put into your air fryer and arrange in a single layer.
Four: Cook at 200°C for 15 minutes, shaking half way.
Variations
New potatoes in air fryer are pretty simple as they are, which is what we love about them. But, there are a few ways you can mix them up.
You can grate some Parmesan over them and put them back in the air fryer for 2 minutes so they get even crispier, but with some added cheesiness.
It you wanted really herby air fryer baby potatoes, then feel free to add some extra dried oregano, dried parsley and dried thyme. You could also swap the Italian seasoning for Fajita Seasoning or even a Cajun blend.
You could add some vegetables in at the same time as cooking the air fryer new potatoes. Something like chunks of bell pepper would work well.

Store: Leftover air fryer baby potatoes can be stored in an air tight container in the fridge for 3 days.
Freeze: You can store air fryer new potatoes in a ziplock freezer bag in the freezer for up to 3 months.
Defrost: You can defrost these in the fridge overnight.
Reheat: To reheat, put them back in the air fryer at 180°C for 4 minutes, until heated through.

- To make sure the potatoes get really crispy, make sure that they are really dry after washing them. You want to remove as much moisture as possible.
- You might need to cut some of the baby potatoes in half so that they are all a similar size. This will ensure that they all cook at the same time.
- Make sure all of the potatoes are coated in the oil and seasoning. You want every inch of them to have the flavour.
- Some air fryers need preheating first, so make sure you check your manual.

Cooking time will depend on your air fryer, as they all cook differently, and how big your potatoes are. Ours took 15 minutes, however they could take up to 20 minutes. A knife should be able to go into them easily.
