We love Courgette Fritters, but we wanted to try something a little different. Our kids love sweetcorn (and I am yet to meet a kid that doesn't), so this seemed like an obvious alternative and they were a hit.
Light and crispy, they are made with ingredients you probably already have in your kitchen, and they are easy to adapt with different flavours too.
This sweetcorn fritter recipe is a great budget friendly recipe, as it is made mostly with store cupboard staples. They are always ready in just 15 minutes and they freezer really well too.

Ingredients and Substitutions
A full ingredients list, along with US Customary and Metric measurements, can be found in the recipe card at the end of this post.
- Sweetcorn - We used tinned sweetcorn for convenience. You could use frozen too.
- Eggs - The fresher the better. Bring to room temperature before making the batter.
- Flour - We used plain flour, but wholewheat will work too.
- Baking powder - This increase the volume and lightens the texture of the batter.
- Spring onions (scallions) - Finely chopped onion or shallots will also work.
- Coriander (cilantro) - Coriander and corn are a great match, but you could use parsley, basil or sage instead.
Sweetcorn Fritter Variations
The great thing about these sweetcorn fritters is that you can flavour them so many different ways. Use this recipe as a base and then try some different flavourings each time. We love adding Thai curry paste or pesto for a real punch of flavour. Or, you could add a Mexican or Cajun seasoning blend.
You could also mix some peas in with the sweetcorn to have a pea and sweetcorn fritter. Grated carrot and courgette also work to give this recipe for sweetcorn fritters a veggie boost.
How to Make Sweetcorn Fritters
- Step 1: Whisk the eggs and then add the flour and baking powder.
- Step 2: Add the sweetcorn, spring onions (scallions), and coriander.
- Step 3: Mix well.
- Step 4: Heat a small amount of oil in a pan and add spoonfuls of the corn batter. Using two spoons, shape into rough circles around 10cm/4in in diameter. Fry for 2 minutes on each side.
What Sweetcorn to Use
You really can use any sweetcorn in this recipe. We try to always use fresh, and during corn season this is a great recipe to use if you end up with a lot of it. However, canned or frozen work really well in this recipe too, making it budget friendly.
If you are using canned sweetcorn, then make sure they are drained well and them pat them dry with a kitchen towel, this is so the mixture isn't too wet as it won't get crispy.
If you are using frozen, then you will need to thaw them a little first and this can be done by putting them in a sieve and running them under the tap for a minute or so. Again, make sure to pat them dry.
Serving Suggestions
There are so many options when it comes to how to serve these. First things first, you need a dip. Dip is important. If you want something chunky, then an avocado salsa or Guacamole works well. If you want more or a sauce, why not try Kebab Shop Chilli Sauce, Homemade Tzatziki, Homemade BBQ Sauce or Healthy Tomato Ketchup. We also really like serving a runny poached egg on top, as that gives it a protein boost and has a built in sauce already with it.

- You can use wholewheat flour instead of plain if you prefer.
- A little sprinkle of salt on top of the fritters when serving really brings out the flavour. Obviously leave this out if serving them to kids.

Yes, these are great for kids. They are easy to hold, so they are perfect for weaning. It's also a good way to get extra veggies into your kids diet, as most kids like sweetcorn over other veg.
This mixture is pretty solid, so they do bake well. You won't get the same crispiness, but they still taste delicious. Spoon the mixture on to a baking tray lined with foil, into little circles. Bake in a preheated oven at 200°C/180°C(fan)/400°F/Gas 6 for 10-12 minutes each side.
To make these fritters vegan, you need to swap the egg for a flax egg. For one egg, you just need to mix 1 tablespoon of ground flax seeds with 3 tablespoon of hot water.
You can store them in an air tight container in the fridge and they will keep up to 3 days. Perfect for reaching into the fridge for a quick snack. You can also freeze them, which makes them great for batch cooking. Put them in a freezer bag with a piece of baking paper between each one (this is to stop them all sticking together when frozen) and they will keep for up to 3 months.
To reheat, make sure they are fully defrosted and then you can either quickly fry them in a pan again, or put them in the oven for 10 minutes (this is the easier option if you are reheating a lot of them).

Easy Sweetcorn Fritters
Ingredients
- 260 g (1.66 cups) of Sweetcorn
- 2 Eggs - whisked
- 100 g (0.75 cups) of Plain flour
- 1 teaspoon of Baking powder
- 4 Spring onion (Scallion) - sliced
- 10 g (0.66 cups) of Fresh coriander (cilantro) - finely chopped
- 1 tablespoon of Olive oil
Instructions
- Whisk 2 Eggs and then add 100 g of Plain flour and 1 tsp of Baking powder.
- Add 260 g of Sweetcorn, 4 Spring onion (Scallion), and 10 g of Fresh coriander (cilantro). Mix well.
- Heat 1 tbsp of Olive oil in a pan and add spoonfuls of the corn batter. Using two spoons, shape into rough circles around 10cm/4in in diameter. Fry for 2 minutes on each side.
