If you are looking for a fun and quick Halloween idea, then try these Jack-O-Lantern Quesadillas. Just 2 ingredients is all you need and so many different spooky faces that you can make.

Get the kids involved in the kitchen with these Halloween quesadillas. As simple as cutting faces into a flour tortilla and putting it on top of a cheese topped tortilla and cooking until melted. There are so many different versions of Jack-O-Lantern's face that you can cut out, so get really creative!

This is more of a fun and cute Halloween recipe, that is perfect for younger kids who will find anything else too scary. We have a little tradition of having these before we go out trick or treating.

Ingredients and Substitutions

  • Tortillas - You want to use soft flour tortillas for this recipe.
  • Cheese - We used a mature cheddar. It melts really well and the strong flavor means that a little goes a long way. You could give these a pizza twist by adding some pizza sauce and mozzarella.

Variations

The great thing about quesadillas is that they are so easy to adapt. We keep these simple with just shredded cheese, but there are lots more things you can add to them. You just need to make sure that the cheese is the top layer, so that is what you see through the cut out face.

On the bottom layer on the Jack-O-Lantern Quesadillas, you could add a sauce like Homemade Salsa or Healthy BBQ Sauce.

To add some protein and make these Halloween quesadillas a little more filling, you could add some cooked shredded chicken (leftovers from our Slow Cooker Chicken Breasts work well) or some refried beans.

How To Make Jack-O-Lantern Quesadillas - Step by Step

  1. Step 1: Take two of the flour tortillas and cut some Jack-O-Lantern faces into them using a sharp paring knife.
    Divide the cheese between the other two tortillas.

  1. Step 2: Put the cut tortillas on top of the cheese loaded one.

  1. Step 3: Cook in a dry frying pan for about 3 minutes, until the cheese has melted. Do NOT flip them.

Serving Suggestions

We love these Halloween quesadillas served with all the usual sides like Baked Tortilla Chips, Guacamole and Nacho Cheese or a Sour Cream Dip.

Extra Tips

  • Although you would usually flip a tortilla half way through so both sides of the tortilla gets crispy, do NOT flip these. All the cheese will come out of the cut out shapes.
  • If you did want both sides of the tortillas crispy, then you could cook these in the oven. They will take about 10 minutes at 200°C/180°C(fan)/400F/Gas 6.
  • You could also just pre-cook the top half to brown it before putting it on top and cooking it all.
  • If you want to get kids involved in designing their own faces, then give them a toothpick to outline the shapes they want and then a grown-up can use a knife to cut the actual shapes out.

How to store leftovers

Any leftovers can be kept in an airtight container in the fridge for 2 days. You can reheat them in the oven or the air fryer.

What to do with the cut out pieces

Don't waste them! You can brush them with a little oil and either bake them for mini tortilla chip or follow our recipe for Air Fryer Tortilla Chips.

  • 2 Flour tortillas - for cutting
  • 2 Flour tortillas - left whole
  • 60 g (0.5 cups) Cheddar cheese - mature; grated
